When we were given the keys to Happymix, it was a puddle of potential. The tall historic ceiling had long been covered up by sad office ceiling tiles. The floor had been covered with glue down vinyl and the space seemed so… small.

But we had a vision. A bright, welcoming space where light filled the room and the smell of freshly cooked crepes spilled out into the streets. Where people could gather to celebrate special occasions or just wander in off the square to get a taste of our Japanese style crepes, smoothies, and drinks.

A place where you didn’t have to worry about the ingredients because we don’t believe in cutting corners - we use fresh, organic when possible, real ingredients. (Sorry, there’s no replacement for , trust us, we searched!)

All of that… and no tipping ever allowed. Now that? That’s happy. Happymix. 💕✨ Did you know we were anti tip?⬇️

From high school sweethearts → newlyweds → new parents → losing our son, and nearly my life… now we’ve entered a new phase of our adventure: owning a restaurant! ()

Kevin’s character arc really ought to be studied. This man had never cooked a day in his life (because I LOVED to cook) then… sepsis nearly took me out. When I finally came home I couldn’t sit up, so I certainly couldn’t cook. So what did Kevin do? He taught himself.

He’s been making every meal for our family for nearly a decade now, and our favorite meal is crepes! We’ve dreamed of opening a creperie for a decade. But, that’s a crazy big dream… right? It could never come true… could it?

After countless hours designing, demoing, building, planning, testing, creating, failing, succeeding, and never giving up… we were finally able to open ‘s doors about three months ago for our soft launch.

We’ve learned SOOO much in these past few past months. Like: how many gallons of milk can fit in my car’s cooler. (The number is 8 if you’re curious) 👀 How little amount of sleep we can survive off of until our body starts forcing us to sleep. (We can’t pull off more than 5 consecutive days of only 2 hours each night.) Why it’s important to buy cups in bulk (we’ve run out and had to scramble across DFW multiple times to find more.) 🤭

We’ve also learned how incredible our community is. Showing up day after day, celebrating birthdays and sharing their special moments with us. We’ve learned at juuussstt the right hour an iridescent rainbow appears in two places in our shop. 🌈 That people REALLY love our banana cloud matcha. 🍵 AND that our bathrooms… with two different colored toilets… is a delight to find. 💕💚

At Happymix we use ceremonial Marukyu Koyamaen matcha, premium milks, dye free organic syrups and an always fresh organic cloud topped with fresh fruit (or sprinkles) for our cloud matcha menu.

This matcha was hard to source - it’s not sold in the states on any grocery store shelf. Marukyu Koyamaen was founded in 1704, and is a highly prestigious, multi-generational matcha producer based in Uji, Kyoto. They’re renowned globally for meticulous cultivation and traditional stone-milling, it is the most highly regarded brand among Japan’s traditional tea schools, and we are so excited to bring it straight from Japan to you. ⊹˚₊

Meet our owners - Callie and Kevin Colwick. (Aren’t they so cute as tiny action figures?!) 😍

They’ve been dreaming of creating Happymix since… well… since wayyyyy back when Callie had human feet. 🙃 (So it’s been a dream for quite a while. 💕)

McKinney residents for over a decade, you’ll usually find scooting around downtown in her electric wheelchair - pink hair flowing in the wind and their daughter Kenzi hot on her trail. Kevin can be found in his shop or on a job site, tool in hand, working his trade as a carpenter… creating beautiful things with his team over at .

Callie loves all things pink, matcha, mochi and boba tea… while Kevin loves crepes and savory treats. Together they are excited to bring Happymix to life. ✨

Together they have their daughter, Kenzi, and a sweet little miniature dachshund named Khloe. (Oh - and their flock of fluffy chickens) 🐓💕

There are a lot of things they’re working on to get Happymix opened… but the three biggest things are:
➀ Construction/Decorating
➁ Menu Development
➂ Hiring

If you’ve been by the store front you’ll see we’re currently on step #1 - construction! (Lucky for us Kevin does this sort of thing for a living) 🤭

So excited to share all the progress as we bring this dream to life! So, sit down, buckle in, grab a yummy snack and enjoy the show. 🍿

We’ll be bringing you delicious crepes, refreshing smoothies, matcha yumminess, boba tea bliss, and SO much more—all wrapped up in a space that is warm, inviting and filled with pure happiness! ⋆౨ৎ˚⟡˖ ࣪

This tiny dream that was planted in our hearts nearly a decade ago has blossomed, and we are so overwhelmed by Christ faithfulness and all He’s doing in the community He has so graciously blessed us with.
