We opened to the public in June 2004 by Chef Marlene Elkhouri, who brought traditional Northern Lebanese Creations to life. Elkhouri, who takes a more progressive/ modern take on classic Mediterranean & Lebanese dishes. Our dishes are created by combining 4 key points based on respect. First, respect the ingredients. Always source locally & sustainable. Our farmers, ranchers & provers help create
a taste that is all of its own. Second, respect the origin of the dish. Each creation starts by researching the original old school way of making it, the idea isn't to improve the dish but to translate it using ingredients that are available locally and move it forward. Third, respect the season. We are a slow food restaurant, which means we use what's in season and actively make those items the stars of the dish. Lastly, respect the story. Each dish has a story, be it traditional one or based on our travels & experiences, each dish tells a story.
