The first bite of spring Bonito (Katsuo) marks the start of the season. Unlike its richer autumn counterpart, the spring catch is lean, firm, and beautifully clean. Think of it as a brighter, more vibrant version of tuna—meaty, slightly mineral, and incredibly refreshing. Best enjoyed simply with grated radish and scallions to highlight its fresh, ocean-forward flavor.🍣🐟😋

Served as sushi, sashimi, or tataki. Please ask your server for availability.

Sushi Ko through little Elliot’s eyes: warm lights, delicious sushi and love.

Little Elliot always sits at the sushi bar, right in front of Chef James, together with his father and little brother. He loves exploring different kinds of sushi and watching James carefully make each piece.

This beautiful artwork is his gift to James. He even placed it in a gift-wrapped box and came to Sushi Ko just to deliver it. It was so heartwarming and truly beautiful. I really should have filmed the moment James unwrapped it, and how surprised and happy he was. 💛

Thank you, Elliot—we really love your artwork. Keep drawing!!! 🎨✨

We truly believe that great ingredients are the heart of good food. Sometimes, a single beautiful piece of fish is all it takes to brighten a chef’s day.😇😇

An omakase reservation for six did not show up last night, but by adjusting our mindset, we were able to turn what had been a disappointment into a beautiful part of our staff dinner. What followed was surprisingly comforting, allowing us to sit together and enjoy the beautiful platter and dishes James made for us.❤️❤️🤗🤗

With that said, we kindly ask that anyone who has made a reservation but cannot make it please call us during the business hour to cancel. This is especially important for omakase reservations, as we order and prepare fish SPECIALLY for your group.
As a local restaurant, we choose not to pre-charge an omakase deposit because so many of our guests are dear neighbors, friends, and longtime regulars. We truly value and trust our guests, and we sincerely appreciate your respect for that trust.

Thank you so much for your understanding and continued support. We look forward to seeing you soon!😊😊
