Sunday has rules now.

The lobster BLT. The classic eggs benedict. The Fauchere benedict, our take on the original, the one regulars order without looking at the menu.

These three did not become favorites by accident. They earned it one plate at a time, one Sunday after another, until people stopped asking what is good and started asking for them by name.

The porch is open 11am - 3pm. The Bloody Marys are built properly. The kitchen does not rush a benedict, and you should not rush eating one.

Bar Louis at Hotel Fauchere has an entire menu dedicated to amaro.

Not a shelf with four bottles and a handwritten card. A menu. Organized by style, region, and flavor profile. Bitter. Herbal. Alpine. Citrus. The bartenders know every one of them and they will tell you where to start based on what you just ate and what you feel like drinking.

Amaro is one of the most interesting categories in the drinks world right now. It has been for a decade, quietly, among the people who pay close attention.
