Please congratulate Chase Dimsha on becoming our new Executive Sous Chef!

A Montana native with over 14 years of culinary experience, Chase has built his career exploring a wide range of cooking styles and traditions. He got his start with the culinary department at Montana State University, where he developed a strong foundation and had the opportunity to work alongside chefs from around the world.

After the pandemic, he returned home to the Bitterroot Valley and found his place at The Keep, where the historic setting perfectly complimented his two greatest passions, food and history. He is driven by creating dishes that are both beautiful and deeply flavorful, blending time-honored techniques with modern ingredients and global influences to craft a unique dining experience.

Outside the kitchen, you will find Chase immersed in Montana’s outdoors, camping, kayaking, fishing, and responsibly foraging ingredients from the mountains and streams that inspire his cooking.
