Founded in 1987, Bayern Brewing is the oldest brewery in Montana and the only German brewery in the Rocky Mountains. We take pride in our German heritage and craftsmanship, providing our customers with the finest German lagers and ales. ity, menu of some of the most requested German dishes. Bayern Brewing's owner, Jürgen Knöller, came from an alpine area in Bavaria, called the "Allgäu," is the most picturesque area in all of Bavaria and also home to the world famous King Ludwig Castle of Neu Schwanstein. The Edelweiss is Bavaria's state flower and indigenous to the region of the "Allgäu." This rare and very sensitive flower grows only in the most remote crevices in the alpine rock formations above the tree line and became almost extinct in the late 70s, due to air pollution and acid rain. Effective emission management and conservation efforts allowed the Edelweiss to survive. Now protected under Federal Law, it serves as an indicator plant for a healthy ecosystem. The Edelweiss Bistro embraces Bayern Brewing's philosophy to employ sustainable and responsible business practices. The beef and pork used is humanely-raised by local suppliers in Western Montana, free of hormones and antibiotics. Eggs come from local suppliers raising cage-free chickens that are free of growth hormones and antibiotics. Imported items from Germany such as pickles, mustards, condiments and seasonings contain no high-fructose corn syrup, artificial colorings or preservatives. Our mission is to provide customers fun food that is made with the highest quality ingredients, in a sustainable manner, at an affordable price; thus complementing Bayern's German lagers and ales.
