Angel and Silverton soft-opened the weekend of Jan. 7, after the final blessing of the fire marshal Jan. 6. The restaurant intended to open Jan. 4, but owner Mark Burnett was delayed a

fter an inspection that day. The restaurant will officially open Tuesday, Jan. 10, according to general manager Julio Valera. The restaurant specializes in locally sourced steaks and classic American fare, including what Burnett calls "wood-fired food," a cheeky reference to the restaurant's fiery history. Burnett rebuilt the restaurant after a fire destroyed the former building in 2014. Flames have plagued the MarKum Inn for years, with at least two fires in recent history closing the restaurant for periods of time. In 1950, the restaurant was known as the Marquam Tavern, before it crumbled in a blaze and reopened in the '70s. "(A Marquam local)’s wife collects matchbooks," Burnett says, holding a small white matchbook with worn edges. "Sully and Vi owned the restaurant, or tavern as it was known then, the Marquam Tavern, ... and we loved this: 'Easy to find, hard to leave,' was their logo." The MarKum Inn is hard to miss: The large rancher-style sign juts out over Highway 213 in the intersection of Marquam, where there's little besides a small store and a church. Its popularity with Salem, Silverton, Mt. Angel and various Marion County ranchers kept the restaurant alive for over 100 years. Now, under new ownership, that popularity has no sign of slowing. Fresh Sheet is up for the week here at The Markum Inn, Mt. Angel. Here's what the kitchen's got going.

And a heads-up for the weekend: we're now open at 11 a.m. on Saturdays and Sundays.

This week's specials:

• Baked Mac N Cheese: penne in a housemade cheddar sauce with herbed panko on top
• Friday: Half Rack BBQ Pork Ribs with fries and coleslaw
• Sunday: 12oz Prime Rib with a loaded baked potato, seasonal veggie, and au jus
• Weekend Breakfast: French Toast with marionberry drizzle, powdered sugar and toasted hazelnuts, plus Country Hash with two eggs any style

The mac and cheese is a solid midweek plate. Fridays are for the ribs. And the Sunday prime rib is worth the drive out to Mt. Angel if you've never had it.

Bring the family, grab a stool at the bar, or round up a big group. That's what we're here for.

There’s something special about a weekly menu that gives you a reason to come back, and this week’s Fresh Sheet is filled with hearty, satisfying favorites made for slowing down and enjoying a great meal.

Start the week with our Patty Melt, made with a ⅓-pound burger patty, caramelized onions, 1000 Island dressing, and melted cheddar on Texas toast.

On Friday, we’re serving a half rack of BBQ pork ribs with French fries and coleslaw.

Then on Sunday, settle in for a classic 12-ounce prime rib dinner with a loaded baked potato, seasonal vegetables, and au jus.

Weekend breakfast deserves its own moment, too. Choose our French toast topped with Marion berry drizzle, powdered sugar, and toasted hazelnuts, or dig into a loaded breakfast burrito with scrambled eggs, potatoes, onions, bell peppers, mushrooms, cheddar, and arugula, served with a side of potatoes.

Please note our new weekend hours. We now open at 11 a.m. on Saturdays and Sundays.

Lighter days call for lighter plates, and ours come piled high.

Our beet and avocado salad has been quietly stealing the show. Roasted beets, ripe avocado, a citrus dressing that pulls everything together, and a generous side of shrimp to make it a meal. It is bright, it is filling, and it absolutely earns its main course spot on the spring menu.

Order it as a starter for the table or add the shrimp and make it dinner. Either way, it pairs perfectly with a glass of something cold from the bar. We are partial to the new Saloon Spritz, but you do you.

Happy Father's Day. Today, Dad eats well.

The doors are open at the Markum Inn and the smoker has been working since early. Come on in for Smoked Brisket with au gratin potatoes and corn on the cob, or Beer Can Chicken with fingerling potatoes, and finish strong with Pineapple Upside Down Cake or Whiskey Chocolate Mousse.

All day long it is $1 off all draft beers and the $8 Diamond Old Fashioned with Dad's name on it.

Father's Day is tomorrow. You still have time to make it a good one.

Picture Dad settled in at the Markum Inn this Sunday, June 21st, an $8 Diamond Old Fashioned in hand, $1 off every draft beer on the board, and a plate of Smoked Brisket or Beer Can Chicken on the way. That is a Sunday done right.

The patio is open. The sun is cooperating. The cocktails are pouring.

If you have not been out to The Markum Inn since the weather turned, this is your sign. Our outdoor patio is officially in full swing, which means warm evenings, sunset drinks, wood fired dinners brought right to your table, and the easy kind of Mt. Angel night that summer was made for.

What we recommend:

2. Order a round of the new spring cocktails (the Saloon Spritz is a strong opener)

Let's talk about the plate Dad is going to remember.

Our Smoked Brisket is the kind that takes its time, slow and low until it pulls apart just right, served alongside creamy au gratin potatoes and sweet corn on the cob. If he leans toward poultry, the Beer Can Chicken comes out juicy and tender with a side of fingerling potatoes.

Then comes the part nobody skips. Pineapple Upside Down Cake for the classic crowd, or a Whiskey Chocolate Mousse for the dad with a little more swagger.
