Back to Basics: American Flag Cookie Cake
Cookie Cake Recipe:
1 cup (226g) unsalted room temp butter
2/3 cup (142g) brown sugar
1/2 cup (100g) granulated sugar
These three together for few minutes (in a stand or hand mixer) until it’s pale in color and fluffy.
Then add...
2 eggs (room temp)
2 teaspoons (8g) vanilla extract or vanilla bean paste
Mix this again until incorporated
Then add your dry ingredients:
2 2/3 cup (320g) all purpose flour (you can also substitute for gluten free flour)
1 teaspoon (6g) baking soda
1/2 teaspoon (3g) salt
Mix your dry ingredients in about halfway - then add your chocolate chips
2-3 cups of chocolate chips (I did 2.5 cups or 420g and it was so chocolatey and I loved it)!
Once you’ve added your chocolate, mix again until a dough is formed. Don’t over-mix. You are looking to stop mixing when you see no more flour streaks.
I pressed my dough into a parchment paper lined 9x13 pan so I had the perfect rectangle shape for the flag. You can also spray your pan with non-stick spray, but lining it with parchment paper guarantees that it won’t stick to the pan.
Bake at 350 degree for 20-25 minutes or until the edges are golden brown and the middle is set (you want to pull it while it’s still shiny. It will continue to bake when it comes out of the oven. Mine was perfect at 20 minutes, but I like the middle of my cookie really gooey.
Let it sit in the pan and continue baking for about 10 minutes after your time is up. Then transfer to a wire rack until cooled. If you don’t want to decorate the same day, you can wrap it or transfer it to a container and decorate the next day.
Frosting:
2 cups or 4 sticks of unsalted, room temperature butter
480g powdered sugar
1 tablespoon vanilla extract
2 teaspoons salt
Beat your butter first, 10 minutes, you want it light, fluffy, and pale. Then add powdered sugar, vanilla, and salt and mix again
Separate into two other bowls. Leave part of it white, some blue and some red (you need less blue than than red and white)
