Yesterday we celebrated our 7-year marriage anniversary! We spent the day hiking though the beautiful woods, stopped under the weeping willow tree to read our vows we recite every year to make sure we are keeping our promises, and ate this amazing sushi rice bowl Katy made with Japanese eggplant “eel”, avocado, cucumber, carrot, nori seaweed, and crispy breadcrumbs.

It’s been a fun and exciting ride so far and I am looking forward for what’s to come! Thank you to all of those around us who have supported us through the years. Much love to you all 🙏🏽❤️🙏🏻🌎🌱🏔️

Recipe for our Curry Potatoes below! Follow us at Everest Eats for more creative and flavorful coming your way!

Since we owned our meal delivery business the last 4 years dropping off hundreds of meals a week, we never really shared recipes. But now that we have dropped meal delivery and are now doing 1-on-1 and group nutrition and lifestyle coaching, I think it’s time to start sharing some of the delicious recipes with our fam 🙏🏽❤️🙏🏻🌱🌎

Enjoy these curry 🍛 potatoes and let us know below in the comments ideas of recipes you’d like next!

Ingredients:
- 4-5 medium-sized whole potatoes
- 2 tablespoons vegetable oil
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)

Instructions:
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Wash and scrub the whole potatoes, then pat them dry with a towel.

3. In a large mixing bowl, combine the vegetable oil, curry powder, cumin, paprika, turmeric, garlic powder, onion powder, salt, and pepper. Mix these seasonings well.

4. Add the whole potatoes to the bowl and toss them until they are evenly coated with the spice mixture.

5. Place the seasoned potatoes on the prepared baking sheet.

6. Roast the potatoes in the preheated oven for about 45-60 minutes, or until they are tender and the skin is crispy. You can check for doneness by inserting a fork; it should go in easily.

7. Once the roasted potatoes are done, remove them from the oven and let them cool for a few minutes.

8. Garnish with fresh cilantro if desired.

I love food. But it’s not just the obvious things like the flavor, smells, and textures that intrigues me the most. What interests me the most is what food is capable of doing once it enters our body.

If nutrient dense ingredients are chosen correctly, you have the ability to bring balance to your body and mind.

Balance and clarity in your mood and emotions, reduction of inflammation in your joints, skin, stomach, boost energy levels to their optimal levels, reduce visceral fat (bad fat that lines your organs) storage.

I love how food can literally change you. Because your body is simply an accumulation of the food you consume. Crazy right?

For the last 8 years, I’ve put this whole diet to the test and can honestly and truly say that i have never felt this good physically, mentally, emotionally, and spiritually.

Now, I get to see my coaching clients do the same!

I get to shift their mindsets, I get to shift their habits, I get to clean up their panty, personal care products, cleaning agents, I get to share delicious recipes and techniques that make eating plants a delight, and I get to watch them begin to THRIVE!

It’s a win win win for everyone. They get to start feeling great again, I feel grateful because I am fulfilling my passion of helping others, and the environment feels the benefits of another person shifting towards a more plant-centric lifestyle.

My November is freeing up so I am looking for those of you who are ready to kickstart their new year early and make some major changes in their life. Sometimes in life, all you need is for someone to guide you, illuminate a path and be with you every step of the way.

Momma really outdid herself this weekend. She made smoked salmon, crab, eel and ahi tuna sushi rolls 100% out of plants. Carrot salmon, hearts of palm crab, Japanese eggplant eel, and watermelon ahi tuna 😋

The textures, the flavors, the feels, all spot on. Just thinking about it and seeing these pictures makes my mouth water.

It’s so nice to be able to teach our lifestyle coaching clients how to sustain themselves and their families with these rich flavors and nourishment.

The most rewarding part for us is watching their transformations first-hand in energy, vibrancy, happiness, confidence, health, and self-worth week to week.

The feeling is priceless!

Also glad to be back in the kitchen to see our old friends at Bella Serra. We have an event for 500 hungry college students today so wish us luck!

Success!! Had some of the most amazing conversations this week with our coaching clients.

One mom in particular was so excited and surprised that her kids have loved every health meal she’s put on their plate in the last month with no push back!

When Katy and I heard that, we both looked at each other with the biggest smile 😊

But it’s no surprise to us, because if Everest and Denali will eat it, we know all kids will love it 🥰

Awesome week of transformation! Clients lowering their blood pressure, cholesterol, visceral fat tissue, increasing body mass, increasing energy, seeing signs of reversing autoimmune disorders, and of course cooking up flavorful nutrient dense foods for their families!

As this journey of changing lives continues, Katy and I are realizing how much we are loving this new journey.

We are tossing around the idea of starting a group session and then following it up with a retreat! What do you think?!

Hibachi on the menu tonight! You better believe I’ll be adding more yum yum sauce!

One of the things Katy and I love about working with our coaching clients is showing them how easy it can be to shop, prep, and create flavorful and health forward meals!

We love seeing the empowerment and confidence grow week by week!

We provide the recipes, the grocery lists, the meal plans, teach how to detox the pantry, cleaning products, beauty products and much more while creating a sustainable environment inside and out.

Cooking thousands of meals a month was fun but changing peoples lives and their families lives is absolutely fulfilling to the heart ❤️

To those of you who are allowing us to guide you through your journey… thank you so much.

I love my wife’s food. Not only do I love the aromatherapy from the smell of garlic coming from the kitchen, the sounds of sizzling from the pan sautéing fresh vegetables, the smell of the harvested fresh herbs, the smoke detector that goes off because Katy warned me it’s too close to the kitchen and I didn’t listen 🤣

But what I love most, is the way she brings together whole, nutrient dense, living foods filled with sunlight and the abundance of vibrant energy just ready to enter my body and do marvelous things to lift me up, make me feel strong, make me feel balanced, and make me feel alive inside.

It was my idea to create Everest Eats. Honestly, Katy wanted nothing to do with owning a business based on previous trauma from another marriage.

It took a lot of overcoming obstacles, letting go of past traumas, the realization of her potential and working towards positively envisioning a new future for Everest Eats.

And we did just that. We created a company that not only had innovative food, but a company that has created an impact of peoples lives and perspective of life.

We’ve had so many instances recently where the universe is just absolutely pulling us back in to bring our food back.

Just had the best conversation with one of our amazing friends Chef Jimmy from Bella Serra about potential monthly food drops, Plant-based pop-up Parties, and one off catering events. So shall see what’s next.

In the meantime, I will continue to feel my mouth water at first site of Katy’s food, close my eyes, and put an exquisite bite into my mouth and always, I mean always say MMMMMMMMMM 🙂
