Pecan Upside Down Cake - OMG😱 DON'T LOSE THIS😋
Ingredients
Pecan Topping:
1/2 cup of either light or dark brown sugar
1/4 cup of corn syrup
1/2 cup of melted butter
1 cup of chopped pecans
A pinch of salt
For the Cake Batter:
A box of vanilla cake mix (I used Betty Crocker Super Moist Vanilla)
1/2 cup of vegetable oil
3 large eggs
3 tablespoons of sour cream
1 cup of water
Instructions:
Preheat your oven to 350 degrees.
Take a 10-inch bundt pan and liberally spray it with non-stick cooking spray. Set it aside for later use.
In a medium-sized bowl, mix the melted butter, brown sugar, corn syrup, and salt using a hand-held mixer or whisk until the brown sugar has almost completely dissolved.
Add the pecans to the brown sugar mixture and mix until it is fully combined.
Pour the mixture into the prepared bundt pan and spread it evenly using a spatula. Set it aside.
In a large bowl, mix the cake mix, eggs, vegetable oil, water, and sour cream using a hand-held mixer or whisk until there are no lumps.
Pour the cake batter over the pecan topping and make sure it is spread evenly using a spatula.
Bake in the preheated oven for 40 to 45 minutes or until a toothpick or cake tester stick inserted comes out clean.
After the cake is finished baking, remove the bundt pan from the oven and let it cool on a cooling rack for 10 minutes. Do not attempt to flip the pan before this time.
After 10 minutes, place a large plate over the top of the bundt pan and invert the cake onto the plate. To loosen the pecans, you can bang the top of the pan a few times before lifting it.
Serve the cake warm with your favorite ice cream or allow it to cool and serve at room temperature.
