We are flatbread fanatic foodies and can make them fabulous! Some people believe that dreams are called dreams for a reason and that the likelihood of them coming true is slim. Well, we decided to challenge that notion and turn our dream into a reality. My husband and I are risking it all! We sold our home in Connecticut and much of what was inside of it. What was left was crammed into a storage P

OD and will remain in there until who knows when. We left our family, friends and the comfort of familiarity behind and relocated to a happy little place in Myrtle Beach with my in-laws. Being here, we are hoping to save as much money as we can, with the free child care for our 3-year-old daughter Stella being a huge plus. We are so very thankful and hope they will be willing to put up with the three of us – and our two dogs – until Charleston Flats gets up and running. My handsome and charmingly sarcastic husband Steve decided to forgo the typical 9-5, guaranteed source of income, stable job to help me fulfill my dream and passion in life: FOOD! Plus I have to admit he can really work the kitchen – one of the reasons I married him. Food and the fondness of great flavor have been in me since I was born, and I am grateful that my mom and dad could see it in me. They kept me involved in cooking throughout my whole life. They would drive me up to the Culinary Institute of America for weekend classes during my childhood years, and I then chose to attend the prestigious school for college. While there, I learned everything from fundamentals to fabrication of food, but I truly felt my passion and talent came from my large Italian family. Food is our life! Sharing food with people we love is priceless. We literally breathe food! Watching someone's face while eating something I have created and then telling me it's one of the best things they ever tasted gives me complete joy, satisfaction and chills up my arms. This is why I am sure my food truck will succeed! This is what I was made for! We are truly blessed to have the support of our family and friends and look forward to serving them our delicious gourmet flatbreads in the near future. We greatly appreciate any form of kindness you can give, whether it's good advice, supporting words, prayer or paper, and we thank you for believing in us and helping us get one step closer into making our dream a reality. Good to see them trucking on!

I can't believe how much support I still recieve from my followers/customers!

I still get loads of messages asking me to do events and that is bittersweet.

It has not been easy being off Charleston Flats and I miss it terribly. Can you believe its been over a yr already? I miss everything about it. I miss working side by side with Nick and coming up with creative new menu items together, doing events with our food truck family, the fast pace of it all and the adrenaline rush that comes with it. The hrs of prep and cleaning, even the breakdowns, my kids coming after hrs to make thier very own items to try to impress thier mom, but most of all you! I miss feeding you and talking to you! Hearing how much you loved what you ate from Charleaton Flats and how it's inspired you! I surely miss serving you all!

Sometime life does not go as planned but I have learned to trust in Gods plan.

Right now I am very happy! With life, my career and the people I am sharing it with and the challanges I have recently faced have been blessings in disguise. I know that faith, food, family and people are what I am most passionate about and it's amazing that when they all mold together it makes a beautiful fulfilling life.

I can't wait to see where this road will take me. I do know food will always be a part the journey and you will see me again! Right now I'm just enjoying the ride!

Even though you will not find Charleston Flats at the festival this yr, I highly recommend going! More than 50 trucks! They need your support and you need to eat delicious food!

This yr I will be experiencing it from the other side which is bittersweet for me. I'm sure I will be emotional so if you happen to see me make sure you pull me aside to say hello. I miss you guys!

So it's been a very long time since I posted. Now here I am......and it just so happens that I'm on my truck....and crying.

It's been an emotional rollercoaster the last three yrs. Some of you who I have developed friendships with know the story and the rest of you who I still am very fond of probably are worried I fell off the face of the Earth and are never going to get to eat from Charleston Flats again. I apologize for dissapearing for so long and not doing a better job of informing you of what's going on.

I've actually bumped into some of you over the last 8 months since the truck has been down and you made me feel extremely loved and appreciated. Thank you for reaching out and for your support and kind words. It has not been easy.

So I'm going to explain as best as I can why you haven't seen me with also keeping some personal matters out for the respect of certain people in my life.

As most of you know the truck broke down in the very beginning of September. Turns out it needed to have the engine replaced which would make this round number 2. My second engine in three yrs!
There wound up being a whole bunch of mechanical issues with it which are now completely fixed but unfortunately has become a financial burden for me. One engine ok but the second I was not expecting at all. I was not prepared to have to pay for another engine.

As the truck was getting fixed I had much time to think things through. I realized how much time I was spending on the truck 24/7 really, and not with my kids. My kids would say things like I'm so happy we have you back....and that broke my heart.

I wasn't planning on having to operate the truck on my own which is not easy but did it anyway because I didn't want to dissapointed you, my loyal customers. I did have awesome help for some time but because of the unsteadiness of business I was unable to pay employees and that's not fair. Most months I couldn't even pay myself. I'm not saying that the food truck business is impossible but it's more than I can handle on my own with still being able to give my children the time they need from me. I won't get these yrs back and I need to do what is best for them.

I have made the hard decision to leave Charleston Flats with the hopes someone is out there who will love it as much as I did. I worked very hard for this truck and went through so much and still managed to kept it going but the time has come. It's someone else's turn!

God has opened new doors for my family and I and I am actually doing very well and extremely happy with being able to be a Mom again. Im still very busy with my new work but I have much more flexibility so I can schedule clients around my kids!

I know some of you will be dissapointed but I also know most of my customers became friends and will be happy for my family and I. You will still see me around the food trucks! I am still extremely supportive of them all and hope you continue to frequent them and help build the Myrtle Beach food scene!

I will miss this truck tremendously but am grateful for the yrs I had and all of you! It was exciting! I never thought I would have been the first truck of Myrtle Beach! I didn't think I had it in me. You are much stronger than you will ever ever imagine and I hope you take those chances and reach for your dreams even if they only last for a short time. I have no regrets!!! Just new dreams that I need to chase!
