Today we had the pleasure of serving up authentic Texas BBQ the way it was meant to be—plated on trays and served fresh from the food truck.

Guests came back for seconds, and there was even enough packed up to enjoy later.

Growth isn’t always comfortable.

It stretches you, pulls you in directions you never expected, and challenges you in ways you didn’t know existed.

The last week and a half has been one of the toughest stretches since we started BaQ Bone BBQ. Like every growing business, we’ve experienced our share of growing pains. But every challenge has made us stronger.

This journey has required 70 and 80-hour work weeks, countless sacrifices, and time away from my wife and kids. None of it has been easy, but one thing is certain—there ain’t no quit in me.

Earlier this year, we started building our custom M&M 240 with Majd Taby&mbbqcompany. After months of waiting, we finally made the trip to Tool, Texas, to bring it home. This new rotisserie wood-fired offset is a huge investment in our future and will help us serve even better Texas barbecue.

Juneteenth has always been one of my favorite holidays. Growing up in Texas, we’ve celebrated it for as long as I can remember. Seeing it become a nationally recognized holiday has been special, but watching grow year after year has been even better. It’s outgrown Fort Negley, and it won’t be long before it outgrows Centennial Park too.

We had a blast serving up smoked wings, our famous Fuel City Elote Bowls, and Triple D Brisket Tacos all day long. Thank you to everyone who came out, supported us, and showed love.

We can’t wait to see y’all again next year! In the meantime, come see us every Thursday & Friday from 5–9 PM at Bearded Iris Brewing for authentic Texas BBQ, Tex-Mex favorites, and Caribbean-inspired flavors. 🔥🤝🏿

There’s an art to cooking a great spare rib. Pull it too early and it’s tough and gummy. Pull it too late and it’s dry and falling off the bone.

At BaQ-Bone BBQ, we cook our Texas spare ribs to what pitmasters call bite-through tender—that perfect texture where the meat comes cleanly off the bone with a bite, but still has just enough pull to remind you it’s real barbecue.

The sweet spot is usually around 185°–190°F in the thickest part of the rack near the center bones, but temperature is only part of the story. We also look for the right bend, bark, and feel before they ever leave the pit.

Not too tough. Not falling apart. Just right. 🔥🍖
