I felt like such a fraud making this soup. 👇🏾
I’ve been obsessed with this soup ever since I first tried it. While I usually stick to creating soul food, plant-based comfort food, this vegan take on Tom Kha G*i (vegan version) soup has had me completely hooked and I couldn’t resist making it for the community 😩.
Made with tofu, mushrooms, and vegetables in a rich broth featuring coconut milk, lemongrass, and galangal, this is my soulful interpretation of a dish I’m completely obsessed with.
Thanks to the support of Support + Feed, I was able to prepare a batch for the community and stock the Nashville Community Fridge with free meals for anyone who needs them.
You can find the fridge at Watershed Wellness Collective in Madison, Tennessee. The fridge is now accessible 24/7 and is located outside the gates at the back of the building, making it even easier for neighbors to access fresh food whenever they need it.
