One of our customer favorites is our pasta salad (mine too).
There are countless versions of pasta salad, and I'm sure many of them are delicious. But the one we serve at Caribbean Ice is special to me, here is why…
During the early years of my dad's retirement, my mom made an effort for them to eat a little lighter. There was no internet back then, no influencers sharing recipes all day long. She simply figured things out as she went, and one of the things she created was her pasta salad.
She always made enough to share with me. At the time, I was a young mother with five children, and having something homemade and ready to eat was a gift.
Sadly, my precious mom died suddenly in 1997.
When Caribbean Ice opened in 2001, we began developing our menu. We didn't have influencers then either. Our menu grew from necessity, and my home kitchen became our test kitchen. Our four sons were the willing ‘taste testers’.
As we worked on salads for the menu, I remembered my mother's pasta salad and recreated it as best I could. We added it to the menu, and it has been one of our top sellers ever since.
Every time I see a pasta salad being made, I feel a connection to my mom.
Thank you to everyone who orders our pasta salad. It may seem like a small thing, but it really isn't. Each order helps keep a memory alive. Food has a beautiful way of connecting us to the people we love.
Maybe it's time to give it a proper name.
