Hello to all my favorite keto people. I have a few things to share with you.
1. Stir Fry Meal Using a Bag of Chipolte Salad Mix. Most grocery stores have these mixes. Look at the ingredients and make sure they are all ok to saute (any kind of lettuces won't work). In a skillet brown your meat (beef, pork, chicken, Polish sausage, etc.). Take it out of the pan and keep warm. Pour in a bit of oil (I've been using avocado oil or ghee lately) and then the chipolte mix. Cook for about 5 minutes. Add the meat, spices, maybe a little balsamic vinegar, and there you have it. Add a dollop of sour cream, chunks of avocado or fresh cut cilantro if you have it. Serve with cranberry sauce (page 13), squash (page 27), or just by itself. Really good! Sometimes I'll add the dried cranberries and/or the sunflower seeds that came with the Chipolte mix but I don't use the dressing (too many chemicals added in those ingredients).
2. Chicken with Smashed Brussels Sprouts (page27)-I don't smash my sprouts, I just cut them in half or fourths if they are big, cook them in a skillet with ghee or avocado oil then add cooked chicken (rotisseire chicken is great for this). Nice quick and delicious meal.
3. For Easter we had a cheesy ham and broccoli bake (page 46). It was delicious. Served it with cranberry sauce.
4. Beef Crack Slaw (page 37)- I used a pound of ground beef and shredded fresh cabbage and sliced onions. Good recipe, has an Oriental flavor to it. Great with sour cream, cut green onions and toasted sesame seeds.
5. Last but not least, something Ken and I do on Mondays. We "fast" all day (no breakfast or lunch and try to just drink water all day). Then around 5:00 I make a tray of appetizers and Ken makes my favorite cocktail: a vodka gimlet. We sure look for to our fasting days!

Hello, keto friends and family. I have lots to share with you so let's begin. Most of these are our favorites and you've seen them before but the photos are our current meals (from mid January until now)
Chili (page 38) (before the dollop of sour cream), sauteed asparagus (page 25) and keto cornbread (page 73)-Great on those chilly (pun intended) days;
Pot Roast (page 44)-Skip the banana peppers, ½ stick butter instead of whole stick, and add a half of a large onion to the slow cooker. At end, take out meat and use an emmersion blender to make a nice thick gravy for the meat. I also added cut up sauteed mushrooms that I prepared earlier that day. Smashed Brussels Sprouts (page 27)-I didn't smash them, I cut them in half and sauteed them in my electric fry pan. Butternut Squash (page 27)- so easy to make (a day ahead) and a nice looking side dish;
Salmon Burgers (page 65)-After mixing the ingredients, pour the whole mixture into the skillet and flatten with spatula. After 7 minutes, cut into 4 sections then flip for the rest of cooking time. This is a lot easier than making the patties and trying to keep them round. Tastes just as good!;
Chicken Stir Fry-I used a bag of Sweet Kale Vegetble Salad Kit (Walmart), sauteed in ghee then added cut up cooked chicken. Added Craisins and roasted pecans (page 3). Super good;
Avocado Chocolate Mousse (page 86)-One of our favs. Added Redi Whip (heavy cream), Lily's chocolate chips and/or pecans. Yum;
Chicken Fajita Queso Bake (page 60)-Instead of chicken I used beef strips (sliced Beef Bottom Round from Walmart) and I cook this in my electric skillet with avocado oil. I serve this with tortilla chips (I know these are against keto rules but we like them anyway), guacamole or salsa. Have a Corona beer, too, with a lime slice;
Fried Brussels Sprouts (page 27)-At the end add about ¼ cup crushed Durkees fried onions, sprinkle with a good balsamic vinegar and a little honey. Broil to a sizzly brown. I think you'll like these as much as we do. We got the idea from Red Lobster. They had these as a side;
Meatloaf (page 42)-We like Heinz sugar free ketchup. Always a great meal. Don't look at the cheesy fried potatoes and onions side dish (not keto);
Tuna Melt Hot Dish (page 66)-I made this without the kale and onion. It was delicious. Cabbage Cole Slaw (page 23)-Added ½ tsp. Djon mustard, walnuts and cut up apples. Don't use red cabbage because it turns the salad pink;
Chicken Alfredo Casserole (page 57) with Cranberry Sauce (page 13)-If you have trouble with your cranberry sauce crystalizing, add your sweetener (powdered Swerve) and vanilla AFTER the cranberries have popped and the heat is turned off. I use an emmersion blender to smooth the sauce a bit. Ken loves my cranberry sauce, and not just with chicken;
Chicken Fajitas (page 60)-Before and after pics, Cauliflower Rice (page 30)-We have this often. I make the cauliflower rice before the meal using a bag of frozen cauliflower rice). Use fresh cut cilantro for the rice and sprinkling some over the sour cream on the fajitas.

I hope you are all fairing well during this pandemic. Ken and I are well and still (try to stay) on the keto way of eating. Most of the time we are good, especially with fasting from 6:00PM until 1:00PM the next day, plus trying to stay away from ice cream and chocolate. Here are a few things we've been having for/with our main meal:
Beef Fajitas (page 60), Cauliflower Rice (page 28);
Chicken Fajita Soup (page 21);
Beef Chili (page 38), guacamole (page 18) , tortilla chips;
Cranberries Before and After Cooking (page 13);
Peanut Butter Cookies (not in book);
Pot Roast (page 44) with Mushroom Gravy (I added sauteed mushrooms and onions to the roast juices);
Sausage Cabbage Soup (page 19);
Tuna Cakes (page 66, still came out crumbly but tasted good), broccoli with Mustard Sauce (page 14);
Venison Steaks (not in book, sauteed in butter), Brussels sprouts (page 27), Butternut Squash (page 27), sauteed kale (page 25[sauteed asparagus]).

It's been almost two months since I've written and there isn't much new to report from Debbie's Keto Kitchen cookbook. We eat one meal a day, usually around 2:00 in the afternoon, and it's always our favorite recipes from the cookbook: chicken with mustard cream sauce (page 14) or Alfredo sauce (page 11), keto cornbread (page 73), chili (page 38), chicken broccoli casserole (page 58), meatloaf (page 42), smashed Brussels sprouts (page 27), cranberry sauce I (page 13) and butternut squash (page 27). Some new things I've tried that are not in my cookbook are *photos below*:
1. tuna cakes (crumbly but good),
2. sausage cabbage soup (Ken's favorite soup),
3. sausage patties with salsa,
4. I make a lot of sauteed cabbage and onion for a side dish (I use bacon drippings for oil and add salt, pepper and garlic powder),
5. Beef tenderloin with Brussels sprouts and squash

Here are some of the things we've been having this summer.
Peanut Butter Chocolate Chip Mug Cakes (page 84)- Changed the original recipe a bit. Great with a dollop of whipped cream or in our case, a scoop of ice cream (don't tell the keto police);
Zucchini "Crisps"/Zucchini Casserole-Neither one's recipe is in my cookbook (found these on Pinterest). I had a lot of zucchini from our garden so I tried a few new recipes. The "crisps" never got crispy so I threw them into a casserole dish and added a lot of cheese and baked it for a while. Still turned out soupy but we ate it anyway because we were hungry. I don't know why I keep trying to cook zucchini.
Ham Cheesy Cauliflower Dish (page 46)-Used Broccoli instead of the recipe's cauliflower. Good combination.
Meatloaf With Acorn Squash and Brussels sprouts (page 42)-We LOVE this keto recipe for meatloaf and you will too, if you haven't tried it already. So good. Acorn squash (page 25) is just baked acorn squash, ya gotts have that once on a while in the fall, right?

Sorry it's been so long...it's been so hot we haven't eaten anything exciting from the cookbook except these:
Chicken Parmesean Bake (page 61)-I used crushed pork rinds instead of almond flour, thought they'd turn out real crunchy (not) and I baked it a little longer than the 20-25 minutes by broiling at the end for about 10 minutes. It was a good meal.Had it with marinara sauce with fresh broccoli on the side.
Strawberry Salad-(no page)-I wanted to show you this salad we had the other day, it was so pretty with the fresh strawberries. If you get some good ones, they are delicious in any kind of salad (we like it with cut up cooked chicken).
Rueben Casserole (no Page)- I saw this recipe in one of my FB Keto groups and had to try it. The day before I slow cooked a corned beef brisket, cooled it down then cut up into bite size pieces and put in the fridge until the next day. The Rueben casserole has cut up corned beef, sauerkraut (Frank's, from a can), 1,000 Island dressing (Ken's brand has the least amount of carbs) and heavy whipping cream for a sauce, cut up dill pickles and lots of sliced Swiss cheese. Baked for 20 minutes then broiled for 10. I served it with:
Zucchini Fritters (page 35)-They were awful. I had shredded all the zucchini from our garden to save for this and other recipes and used 3 cups in this recipe which made 5 large "fritters". I even let the batter set for a couple of hours, draining out the liquid, but they still turned out wet. I served them with a low carb marinara sauce but they weren't very tasty. I'm not making them any more! If you decide to try and they turned out good, let me in on your secret. I have LOTS of shredded zucchini in the freezer.
BLT Salad (no page) with BLT Salad Dressing (page 7)- This was great. I added a cut up avocado to cut up tomatoes from the garden, crispy bacon and nice green and Romaine lettuces. The BLT Dressing was good, too, although not much different than Ranch. Served it with dill pickles, hard boiled eggs and iced tea. Hit the spot on this scorcher of a day.

I made Steak Fajitas for lunch today. I used the Chicken Fajita Queso Bake on page 60 for the basic recipe. Bought two 3oz.steaks from Kwik Trip (a local gas station/convenience store) for $3.00, cut them into strips against the grain, marinated them and all the vegetables from the recipe for a couple of hours in a bag of ⅓ cup avocado oil and 3 Tbl. fajita seasoning mix (page 18). Baked it all in a pan 375 degrees for 20 minutes, upped the heat to 400 degrees and cooked for 15 more minutes. Served it with seasoned cauliflower rice (bag of frozen cauliflower rice cooked in microwave 5 minutes, then sauteed it in a pan with 2 Tbl. butter, 1Tbl lime juice and 1 tsp, dried cilantro), avocado chunks, shredded lettuce, sour cream and a wedge of fresh lime. Good good meal.

I made Tuna Patties (page 66) today. I had always made Salmon Burgers (page 65) but today I wanted to see how the tuna turned out. It's a great recipe. The patties were a little crumbly but tasted great with our favorite Mustard Cream Sauce (page 14). Served them with local fresh asparagus. Delicious.
I hope you are all safe and secure but enjoy the Forth of July celebrations if you are going to any.

I made Salmon Burgers (page 65) with Mustard Cream Sauce (page 14). Both were delicious, especially since I added sauteed-in-ghee sliced onions. Then I sauteed asparagus (page 25) for a side dish and that was very good with the mustard sauce, too. We were too full to have the berry mousse (revised version of the Lime or Lemon Mousse on page 87) so we'll have it later.
Looks like a nice few days coming up, why not try grilling the salmon burgers and asparagus on the grill? Make the cream sauce ahead of time and just heat it up. It makes a great dipping sauce for chicken, too.
