Did you know that not all "Grass Fed" Claims are truly Grass Fed. All livestock at some time in their life "forages" on Grass so anyone can claim their product is grass fed. It's entirely different to have the USDA Certified Label. Read up on the USDA Agricultural Marketing Services Claim Standards to find out what it means to be USDA Certified Grass Fed from the USDA Website...

Grass (Forage) Fed – Grass and forage shall be the feed source consumed for the lifetime of the ruminant animal, with the exception of milk consumed prior to weaning. The diet shall be derived solely from forage consisting of grass (annual and perennial), forbs (e.g., legumes, Brassica), browse, or cereal grain crops in the vegetative (pre-grain) state. Animals cannot be fed grain or grain byproducts and must have continuous access to pasture during the growing season. Hay, haylage, baleage, silage, crop residue without grain, and other roughage sources may also be included as acceptable feed sources. Routine mineral and vitamin supplementation may also be included in the feeding regimen. If incidental supplementation occurs due to inadvertent exposure to non-forage feedstuffs or to ensure the animal’s well being at all times during adverse environmental or physical conditions, the producer must fully document (e.g., receipts, ingredients, and tear tags) the supplementation that occurs including the amount, the frequency, and the supplements provided.

Thank you all for an incredible four years.

Today, I will be selling Ellie's to the folks from a local farm in Danbury called Three J Farms. I am so excited to see them take what we have done with farm to table to the next level--it's going to be their farm's table! They won't be changing the operations or the staff, it will still be the same Ellie's, just with more farm fresh food.

I want to take this opportunity to thank all of the staff, both past and present, who have made Ellie's what it is today--a friendly, warm, inviting, delicious, and fun place to work. You all have created a restaurant that I have been so fortunate and proud to own. Thank you.

I also want to thank all of our loyal customers. You have given this restaurant a vibrant sense of community, and have allowed us to serve you in the best way that we can. I have enjoyed serving you all, and it has been an honor and a privilege to get to know you.

I will be at the restaurant for a while helping out with the transition to the new ownership. I'm looking forward to serving everyone in my new role here, and though I am sad to pass the torch, I am also excited for the new chapter of Ellie's, which will see it continue to grow and improve.
