Matcha koicha or usucha? What’s your preference? What’s the difference? Usucha (薄茶)means thin tea and can be used to brew the majority of ceremonial matcha teas available in the market. Whereas koicha (濃茶 thick tea) is usually brewed using only the top quality ceremonial matcha teas, hand picked and milled, using the youngest more delicate tea leaves of all. So which is for you? It’s possible if you’re new to matcha you will find usucha too strong. Only start with usucha if you are genuinely interested in learning more about the Japanese matcha tea ceremony and authentic ways of traditional matcha tea preparation. If not, there is no harm trying other methods first. 😊 🍵

A Dojo iced matcha is perfect to beat the simmer heat 🥵. It can quickly be made by pouring the prepared Matcha over ice. Add 1.5-2g of Dojo matcha powder to 5-6oz of 80°C water and whisk till smooth. Pour over cubes of ice 🧊. Hint use filtered water to make both the matcha and the ice for a cleaner taste. 😊 🧊 🍵
