For the next chapter of the Unapologetically Filipino Chef Series, presented by Resy, we’re welcoming a conversation that rarely gets the spotlight.

This February, Chef John Navoa of Hapag, fresh off earning the restaurant’s first Michelin star, joins Chef Eric Valdez at Naks for a two-night collaboration dinner centered on the cuisine of Mindanao.

Mindanao, the southernmost island of the Philippines, is defined by striking geography, and one of the country’s largest Muslim populations. Its foodways reflect this history with technique shaped by trade, migration, and centuries of regional exchange across Southeast Asia. These influences create a culinary identity distinct from what is often associated with Filipino cooking in Manila or abroad.

Real ones know the red roll of Fita crackers, the iconic salty-sweet, buttery rounds from every sari-sari store memory. Over here, they get crushed and bound into a crust for Ube Cheesecake, holding a silky layer of whipped ube cream. It’s a new-school dessert with old-school bones, paying homage to the snacks that raised us.

No shrimp here. These fat daddies are sugpo, Filipino grilled prawns, and their larger, sweeter, richer. Charcoal-grilled whole over live fire to blister the shell and lock in all that fat, then drowned in roasted garlic, butter, and s**a (Filipino vinegar) for sharpness 😮‍💨 Ang sarap, mang.
