A hearty and flavorful dish of chicken and mushrooms😋😍


Sauce:
¼ cup balsamic vinegar
1 tablespoon honey (regular or sugar-free)
½ teaspoon kosher salt
¼ teaspoon black pepper
½ teaspoon dried thyme
Chicken:
1.5 lb. boneless skinless chicken thighs (4-5 pieces)
½ teaspoon kosher salt
¼ teaspoon black pepper
1 tablespoon ghee or olive oil
1 lb. sliced mushrooms
1 tablespoon minced fresh garlic
1 tablespoon butter
2 tablespoons chopped parsley for garnish


Prepare the sauce: In a small bowl, whisk together the balsamic vinegar, honey, kosher salt, black pepper, and dried thyme. Set aside.
Season the chicken thighs with kosher salt and black pepper.
Heat the ghee in a large (12-inch) nonstick skillet over medium heat, swirling to coat. Add the chicken thighs in a single layer and cook, undisturbed, for 7 minutes. Flip the chicken pieces and cook until cooked through, about 7 more minutes. Remove to a plate and cover with foil to keep warm.
Add the mushrooms to the same skillet with a splash of water (about 2 tablespoons). Gently stir the mushrooms while also scraping the bottom of the skillet to remove the tasty brown bits that have stuck to it.
After the mushrooms have started reducing a bit in volume, stir in the garlic.
Cook the mushrooms and garlic, stirring often, until the mushrooms are tender and browned, and the liquid that they have released has evaporated, 5-7 minutes.
Add the sauce to the skillet. Simmer, uncovered, stirring occasionally, until the sauce thickens, about 5 minutes. Stir in the butter until it melts.
Add the chicken thighs back to the skillet, turning them to coat in the sauce. Cook for a couple more minutes to heat through.
Divide the chicken and mushrooms between four plates. Drizzle or brush with the pan juices and sprinkle with parsley. Serve immediately.

Oven-baking is the easiest way to cook hamburgers😍🥰


1 lb. lean ground beef (85/15)
1 teaspoon Diamond Crystal kosher salt
¼ teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon chili powder
4 slices of sharp cheddar


Preheat your oven to 400 degrees F.
In a mixing bowl, combine the ground beef, kosher salt, black pepper, onion powder, garlic powder, smoked paprika and chili.
Gently press the beef mixture into an ungreased glass square 8-inch pan.
Bake until cooked through, 12-15 minutes. A meat thermometer should read 160 degrees F.
If there's a lot of cooking liquid in the pan, you can drain some. I like to keep it and allow some of it to get absorbed back into the burgers as they rest.
Top the cooked meat with the cheese slices, as shown in the video below. Return the pan to the oven and bake just until cheese is melted, 1-2 minutes.
Remove the pan from the oven and allow to rest and set for 5 minutes. Cut into four squares and serve.

Bagel crusted ahi tuna


Yield: 2 servings
Time: 30 minutes

2 ahi tuna steaks
1 tbs toasted sesame oil
juice of 1/2 lime
2 tbs soy sauce
4 tbs Spicewalla everything bagel seasoning
1 tbs neutral oil
zest of 1 lime
lime wedges, for garnish
ponzu sauce, for garnish


Pat tuna steaks dry with a paper towel.
In a small mixing bowl, combine the sesame oil, lime juice, and soy sauce, stir together to combine.
Pour over the tuna steaks and let marinate for at least 10 minutes.
Heat a grill to high heat and place a cast iron pan on top.
Pat the tuna steaks dry again and sprinkle the everthing bagel seasoning on top, covering the entire surface and gently pressing into the steak to make sure it stays, flip and repeat on the other side, making sure all surfaces are coated.
Add the oil to the hot cast iron pan then immediately place the tuna steaks inside the pan.
Sear for 2-3 minutes on each side.
Remove from the heat and rest for 5 minutes. Slice into 1/4 inch slices and serve with lime zest, lime wedges and a drizzle of ponzu sauce. Enjoy!
