In Basque, goxua simply means sweet 🧁
It is also the name of a dessert born in Vitoria-Gasteiz — layers of cream, cake, and caramel that the Basque Country has claimed as its own for generations. Ours honors that tradition: apple compote beneath almond cake, quince chantilly for lift, and a wildflower honey custard that pools around everything and lingers long after the last spoonful.
Some dishes carry a place inside them. This is one of them.
