Meet Chef Will Standage. Owner of Madfire Kitchen & Catering; a locally owned, chef-driven business focused on fresh ingredients and bold flavor.
Will was born and raised in Spokane and the Puget Sound area. He started cooking in Spokane as a teenager and in 1999 left for a seasonal cook position in Yellowstone National Park. After several seasons, Will worked his way up to Chef and spent years traveling the country developing his craft.
His culinary journey has taken him through some incredible kitchens and venues including Churchill Downs in Louisville, KY, Lambeau Field in Green Bay, WI, the Florida Everglades, San Diego, and many others.
In 2017, the Standage family returned to the Spokane area to be closer to family and put down roots. Today, Will runs Madfire alongside his wife Noel and their two daughters Madison (“Mad”)and Grace (“Fire”) —“People often ask where the name Madfire came from…
Madfire is named after our two girls, Madison and Grace.
Madison has always gone by Mad, and Grace has always been our little firecracker.
Put them together and you get Madfire.” Noel shares. Sometimes you’ll see them hanging around events, or much to their dismay…occasionally getting put to work.
Wherever they are, it’s a good reminder that when you support a small local business, you’re supporting a family. We’re grateful for the opportunity to serve our community and look forward to building lasting relationships with the people we cook for. The Sunday Table is our take on a small-town country kitchen—serving up hearty, nostalgic breakfasts and simple, comforting lunches. The kind of place where the coffee’s always hot, the food is made from scratch, and it feels a little like sitting at the breakfast table in your PJs and socks… just with a few more people at the table.
We’ll be rolling out menus, behind-the-scenes sneak peaks, and more over the next several days as everything comes together.
