Coffee Report plus Events!

Geogoraphy lesson coming in hot: We have a new High Elevation Washed Colombia straight from the Cauca region (pronounced COW-Kah) in the lower West Side. This will be a coffee we do a full bar take over with - Cold Brew, Drip, Espresso, and Retail! It's a wonderful bean!

The production organization is really cool in who grows this specific lot. We'll quote some of the information we have on it: "Juan Tama is a pioneering organization of indigenous communities in the municipality of Inza in the Cauca department. Founded in 2008, the association encompasses 600 family farms with an estimated production of between 10000 - 13000 bags of Excelso green coffee beans. The association is dedicated to increasing organic and biodiverse food production and food autonomy with the goal of helping its member families enjoy prosperity"

In craft latte news, we are still doing the Cascara Citrus. It's rich, its to***co-y, its bright and citrus forward. It's just all around crushable, especially iced! The cascara we are sourcing from Nicaragua. We find it to be such an interesting product in the coffee world. Some fun facts about cascara if you didn't know: Cascara tea is a unique, sustainable, and caffeine-containing herbal infusion made from the dried skins and pulp of coffee cherries, which are usually discarded during coffee production. It has a bright, fruity flavor—often described as having notes of hibiscus, rosehip, and red berries—and is rich in antioxidants.

Key Details About Cascara Tea
What is it?: Spanish for "husk," cascara is the dried, outer skin of the coffee cherry fruit. It is not technically tea, nor is it coffee, but rather a "coffee fruit" tisane.
Flavor Profile: It tastes sweet and fruity, often described as a mix of hibiscus, rosehip, dried cherry, and to***co, with a light acidity.
Caffeine Content: While variable, it generally contains about one-quarter of the caffeine found in coffee, providing a mild, pleasant energy boost.
Sustainability: It helps reduce waste in coffee production and provides an extra source of income for farmers.
Health Benefits & Characteristics
High Antioxidants: Contains high levels of polyphenols and antioxidants, known to fight oxidative stress.
Nutrient-Rich: Some sources suggest it is rich in potassium and nutrients.
Low Acid: Many find it easier on the stomach compared to roasted coffee.

This week in beans...

We are continuing on our endless endeavor to keep Norfolk caffeinated....and uncaffinated! We just wrapped up some R&D on an insane Decaf Colombian coffee. High elevation, Caturra variety and it is amazing! We've got a limited batch that should last us the month for decaf on bar.

This week's craft latte starting tomorrow we're going to be running a local favorite Lemon//Sage to kick off some better spring weather post last weeks heat wave. Fresh zested lemons with some overnight seaped Sage Leaves simmered down into a syrup. It's especially easy on the lips iced.

Playing around with a cola cold foam while thinking about summer and ice cream floats. We're going to deconstruct and uno reverse that with a cold foam on cold brew, stop by during cafe hours to get an update on the experiments!

As far as caffeine goes we're continuing the Washed Colombia on bar that we've had the past few weeks along with our Washed Mexico. It's crushable. It's easy. It's for the young folks, moms and dads everywhere, and the wise ones who always had their fiber locked in.

We are hosting the Friday Night Flea Market - Garage Band Edition. Vendors showcasing some of the their finest finds and collectibles. Market is set up in the parking lot and over at the Veil as well.

The Fresh Start
Available at Toast during all hours and pictured below. Toasted pita, hummus, cucumber, pickled onions and tomatoes, shredded lettuce, tzatziki, and fresh dill. It tastes amazing! Also the perfect vehicle for adding bacon or sardines, cold smoked salmon - you pick!

Coffee Report

Craft Latte: this week will be our Ginger Demerara and most likely through the weekend. And when that runs out we will swap over to a Strawberry Basil.

Drip and Espresso: This week on bar we are running a Washed Columbia from the Huila region.
Tasting Notes: It has a heavy body with notes of Bittersweet Chocolate, Nougat, Mandarin Orange.
Fun facts for this coffee: Huila is celebrated for its distinctly delicate cup profile, which features bright acidity, sweetness, and a fragrant aroma. Huila’s proximity to the equator and it is rich with volcanic soil. Coffee from Huila has a signature profile: fruit and caramel notes, sweet acidity, and intense aromas. Huila’s two harvests occur between September – December (main crop) and April – May/June (mitaca crop).

Cold Brew Draft: we are finishing up a Washed El Salvador from Santa Ana. We did a hot bloom followed by a 16 hour steep on this cold brew before kegging. Tasting Notes: Caramel, Dried Fruit, and Almond on the head!

Retail Bags: we are going to be rocking this Washed Colombia which we mentioned above. **We are waiting for labels to properly announce this drop. They are in production and taking slightly longer to ship than anticipated.** We might have to bag without our new labels at least for beginning of week. Should be delivered by Monday next week. We also have 20 bags of the Natural Sidama Ethiopia left.
