I've been really getting in a cheesecakes the past couple years!
This is my newest creation and not only do I feel like it turned out good visually but it tastes incredible!
Coffee cheesecake. The right side has deep dark chocolate icing which makes it cafe mocha and the left side has homemade whipped cream and I'm calling that coffee and cream.
Why only have one cheesecake when you can have two? LOL

Well, since it's kind of feels like Fall a little bit around here I got to baking again today. I made raspberry coffee cake with crumb topping and this time I added cinnamon chips just to see how that would be. I think it definitely added a little extra and it was really good!

Newest creation! Peanut butter cupcakes with peanut butter filling, triple dipped in chocolate Gamache and a dollop of peanut butter frosting! I will change from ganach to chocolate buttercream next time. Can't taste the chocolate very much. But this is the process of perfecting a recipe, sometimes you have to make them more than once! Still turned out quite yummy!

Yaaaaaa!!!! I think if you look up the word decadent in the dictionary there would be a picture of this cheesecake! I don't know what got into me today but I had energy! I was just going to make lemon icing and then I decided to just kind of go hog wild. LOL So we have vanilla bean cheesecake with hot fudge poured all over the top (was not hot anymore when i poired it), and then roasted pecan pieces on top of that and then a border of peanut butter icing. Totally calorie free mind you! LOL Not! 🤣

Well I've been busy today! Made my favorite homemade vanilla cupcakes and really wanted to try a couple different things so thats what i did. LOL We've got vanilla cupcakes with lemon buttercream, and then vanilla cupcakes with chocolate icing, and chocolate and peanut butter swirl icing. I must ask, where has peanut butter icing been my whole life??? One of my sisters was talking about it and I'm like boy that sounds good. I could kind of just eat it by the spoonful, but I try not to. LOL

Ok, so finally done decorating! For those of you who like chocolate and vanilla malts instead of just plain old milkshakes, this would be for you! I made vanilla bean malted cheesecake on the bottom 2/3, and the top layer is malted chocolate layer. Crust is a shortbread cookie crust, something new! Vanilla buttercream and a tiny bit of chocolate buttercream on top! Unfortunately I can't try it until Friday or Saturday. But I guess good things come to those who wait! 🥮

So far.....finishing touches tomorrow! 🥰

Never thought I would say this, but I am baked out. LOL anybody else do any baking today? Post a picture of what you baked in the comments below! I made peanut butter fingers. I don't think I'm going to repeat that it was literally all day and it wasn't even a double batch. LOL
