So if anyone would care to nerd out with me a little, I've got a little coffee education for ya. For those that don't know, coffee actually starts out as a seed inside a berry that looks like a slightly larger cranberry. So to get the seed (yes seed, coffee is not a bean), you have to remove the fleshy fruit part. Part of the process that helps remove it is fermentation. Mainly the coffee industry uses aerobic fermentation (fermentation in the presence of dissolved oxygen), but this coffee from Zambia was processed with anaerobic fermentation (no oxygen). Sounded interesting to me, so I roasted some today. Not too long afterward, I opened up the bag and it smelled like chocolate covered mixed berries. And I mean fresh strawberry, blackberry, and blueberry. Needless to say, I am giddy. Hopefully it tastes as good as it smells!

I think this is what they call going off the deep end - 65lbs of coffee! I started roasting a couple years ago when Becca got my first stovetop roaster, and I was only buying a few pounds at a time. Now there's no going back. Roasting my own has been a game changer. And I'm trying to grow. If you can support by buying coffee, that's great! My super ultra expensive high tech (not really) chilling system for knockout, and a picture of the final wort. I don't have a name or style for this one, just threw some stuff together for my first lager at home. My guess is it'll be close to a Marzen. Now that I have a working glycol chiller I felt like doing one.
I guess I have to wait now...
