Why is brisket expensive? 🤔

A quick BBQ math lesson…

Raw brisket cost:
$6.40/lb

After trimming & cooking
A brisket loses about 50% of its weight, making the meat cost about:

$12.80/lb

Typical restaurant pricing
Most restaurants need to charge about 3× food cost to cover labor, rent, utilities, insurance, equipment, credit card fees, and everything else it takes to stay in business.

$12.80 × 3 = $38.40/lb

That means…

🥩 ½ lb brisket: ~$19.20

🥩 1 lb brisket: ~$38.40

We’re not posting this to complain. We just thought it would be interesting to show why brisket costs what it does and how BBQ math actually works behind the scenes.

We are very excited for tomorrow, our first gig selling out of our new trailer and we will be doing at the same location where we first started back in 2024 at the Norton vfw! Come on down, get some great bbq and grab some drinks inside the vfw! 🇺🇸

We’ll be set up Friday, July 10th from 4:00 PM – 8:00 PM at the Norton VFW, 38 Summer St.

Come grab some authentic slow-smoked BBQ, then head inside the VFW to enjoy an ice-cold drink with your meal. The bar will be open, so it’s the perfect way to kick off your Friday night.
