It’s been a beautiful spring here in the Midwest and that’s a recipe for a bountiful crop of rhubarb! The crimson stalks are bursting with that familiar tart flavor that we can’t wait to turn into all kinds of delectable ice cream creations. One year already! Time really does fly when you’re having fun. And what a great year it was!!! The response from everyone has been tremendous and the lines have been epic, even by Coneflower standards! We have loved our newest location in Olde Towne Elkhorn. It’s been a blast getting to meet new friends, and to see some familiar faces as well that have been making the journey to our other Coneflower locations for years. Shout out to our Olde Towne neighbors for welcoming us with open arms and making feel like a part of the community from day one. Super excited for the years to come as the district keeps growing! Special thanks to those who helped make this possible - Tyler Curnes, Scoppa Architecture, , , and . Finally a thanks to all our Elkhorn scoopers, kitchen crew, and delivery drivers!

Humbled and honored to represent Nebraska on this delicious list assembled by ! When we opened the original Coneflower shop back in 2016, we learned about Butterbrickle and its historic significance to Nebraska, specifically Omaha and the Blackstone Hotel now reopened as the . It was our goal to pay tribute to the classic flavor by serving our own interpretation and making the old fashioned toffee from scratch. Since then it has become our most popular flavor and has a permanent spot on the menu!

Congratulations to Katie and Brian for completing their Applied Leadership Academy through Metropolitan Institute for the Culinary Arts. Over the course of nine months, they took a deep dive into professional leadership development, exploring topics ranging from Emotional Intelligence to Design Thinking. The aim of the diverse curriculum was to grow as dynamic leaders and ultimately to make Coneflower an even better place to work.
