Sunday FUN-day is here and we are READY, ("ready for this week to be over, but ready nonetheless"😜) Needless to say, yesterday did NOT go as planned. I prepped two New York strip loins and had 25 steaks ready to roll.......I had planned to freeze the other two loins and run the special again at a later date. As the old saying goes, "man plans, God laughs" and laugh he did!
We sold out so quickly that I had to make a game time decision and break down another loin in the middle of the dinner rush. When the dust settled and we sold out "the second time" we had served 38 specials😳 As much as I'd like to "pretend" that it's Monday and just mow the yard, Dee said I have to go "once more into the fray!"
We are kicking things off with our daily Early Bird Menu and "the Best Deal in Lunch!" The Early Bird is available daily from open-3pm. Things start off with our Early Bird Specials and "the Best Deal in LUNCH!" Your choice of a 1/4lb Deluxe Cheeseburger, 9-piece Chicken Nuggets, 6-inch Turkey Sub or a 1/4lb Chicken Sandwich. All 4 options come with fries for just $5.75 each from 1-3pm daily.
For our regular special we are bringing back the EXTREMELY popular Chicken Bacon Ranch Sandwich! We start with a whole boneless/skinless Chicken Breast butterflied and "worked" into a thin cutlet by beating it like it owes the mob money. Once our cutlet is thin enough to ensure even cooking, we double bread each one in seasoned flour, egg wash and seasoned panko breadcrumbs. Your Chicken Sandwich is fried to order before being topped with 3 slices of cheese and crowned with 5 strips of crispy bacon. This masterpiece is then placed on a massive, toasted bun, garnished with Lettuce and Fresh Tomato and finished with our house made Ranch Dessing. Served with Fries for $18.
The first two times we did this special we sold out and I am expecting that to be the case today. We have just 24 prepped and ready, when/if they are gone......they are GONE.
Then at 4pm it is "the MAIN EVENT" as the weekly round of NASCAR trash talk gets underway with the "Window World 450!" This 0.625-mile short track means fast laps, cold🍻 and Linemen💧and Downtown looks to keep that losing streak intact 😎

The weekend is rollin' and we are keeping the momentum. Our first 2 specials of the week have been BIG successes, and we don't want to stop now........."in fairness, I'd stop. Heck, I was willing to NOT start🤣"

At 3 we are switching to our dinner special and one of the bigger mistakes I have made shopping. Let me give you a little "back story." Most of you know the price of beef (especially steaks) can vary greatly depending on the grade, with some of the most expensive grades being "Prime" and "Certified Angus." Most of the steaks served in restaurants are "Choice."
While I was shopping last week, one of our suppliers had a very good deal on Choice New York strip roasts. I decided to grab a case.......but I am far too stubborn to actually carry glasses with me😆 The result, what I actually grabbed was a case (60lbs) of "Certified Angus Beef" New York roasts. Apparently, I am also not willing to admit my mistakes and return the much more expensive case of steaks🤣 The result is a very special "special" and an opportunity to once more dazzle my wife with her favorite, "Steak Night!"
This evening we will be grilling up some absolutely beautiful, hand cut and well-trimmed, Certified Angus New York Steaks. Each steak is 15 ounces. Your steak is seasoned and grilled to order. Each steak served with Garlic Mashed Potatoes, seasoned green beans and a warm dinner roll for just $21.

Q; Can we get this to go?
A; Yes, but we will NOT be taking phone orders, so you'll need to come on down and order.

Q; Can I get mine "well done?"
A; (Hesitantly) Yes, but they are cut quite thick and I believe even with the superior grade they will get "tough" being on the grill that long. I would suggest allowing me to butterfly the steak allowing it to cook through quicker, while not drying out the beautiful marbling these steaks are known for.

Q; Can I get a baked potato?
A; Nope.

Q; Can I get fries?
A; yes.

Q; How long will my order take?
A; How long is a string? To many variables. Number of orders ahead of you, what is your exact order, how many people are on your ticket etc.

Q; What if I'm in a hurry?
A; Might I suggest some place with a drive through window😉

Q; What if you run out?
A; I 100% plan on selling out. Even though I bought a case of roasts, I have only prepped 2. I saved 2 others for another time. We have 25 specials available and when they are gone......"they are gone."

Q; What if you "DON'T" sell out?
A; If by some odd turn of events I don't serve all of the steaks, we have available I will be "forced" to make my wife a steak for dinner....I bet she won't mind.

Q; Why is your gravy so rich?
A; Glad you asked. When I cut our steaks, I save all of the trim. That trim gets rendered down and separated. I use the rendering to make our gravy and au jus. I also take any of the steak that gets cut with the fat and add it back to our gravy.

Happy Friday! Before we get into the day's festivities, I need to let folks know we will be opening late today. We had to make a run to the pharmacy to grab my prescriptions. Apparently actually filling them when the doctor calls them in would be too much to expect😠 We should be up and running at 2pm.
We are looking to keep the momentum rolling after yesterday's sell out for our Pot Pie! Today we have the ALWAYS popular Shrimp Creole! We start with the "Cajun Holy Trinity" (onion, celery and bell peppers) cooked down and seasoned until they are so tender you could feed'em to a baby. Then we build our roux, adding rich tomato sauce, seasonings and more butter than your doctor would approve of. Finally, we add in the shrimp. Loads and LOADS of delicious shrimp. I think we have about 7 gallons, and I used a little better than 25 POUNDS of shrimp. Each order comes with Sushi grade sticky rice and garlic bread for just $17

Thirsty Thursday is here and man are we coming out "swinging" to start the second half of July!
It all starts with our Early Bird Menu and "the Best Deal in Lunch!" Our Early Bird has several menu items all available from open-3pm and ALL just $5.75!!! We are continuing to offer our 9-piece Chicken Nuggets and fries for the early bird, despite not being printed on the menu.
For our "regular" special I am bringing back the always popular Chicken Pot Pie! Admittedly, I was a little apprehensive about running the Pot Pie this time of year because the weather has been SOOOOO HOT🥵 Apparently the Good Lord agreed with me and dialed up some absolutely PERFECT Pot Pie weather⛈️⚡️⛈️
For our Pot Pies we start with a combination of smoked and oven roasted chicken deboned and hand cut. Our chicken is mixed with wild rice, rich chunks of pepper bacon, sweet corn, peas and carrots. Then we mix in rich poultry gravy to make our delicious pie filling. Each pie is cooked to order with a flaky puff pastry top crust and served with Texas Toast for just $14.
Our Pot Pies "should" be ready to go by 2pm and we will keep serving them all day or until we run out!
This is ANOTHER big week of specials here at the All In, so put that roast back in the freezer and let us do the cooking😉

Happy Wednesday my friends. I hope this finds y'all well and ready for the week ahead. I got a little more shopping, and a LOT of grinding but I am "fairly confident" this is gonna be a fun week here at the All In. Quick trip to see the doc and we can get this party started. See y'all tomorrow.

Is there anything on the PLANET faster than "a day off???"
I can honestly say didn't do ANYTHING (productive) yesterday. "Heck, barely put long pants on😜" Sadly, yesterday is just a fading memory of "what could be!"
After a fun filled day of "get your slow @$$ out of the hammer lane" and several rounds "don't hit me while you're on your phone," I got things "almost" ready for the week. Still have a couple stops tomorrow, after what I PRAY is the last doctor's appointment for a while🙏
I was actually "planning" on a relatively easy week.......that did not happen. We have a ROCKSTAR group of specials dialed up for the week with (assuming things go according to plan) two HOF offerings. I am "planning" to start the week off, with the always popular Chicken Pot Pie. I just need to get the chicken in the brine, cooked, shredded and the filling made. In between finishing the shopping, dealing with the doc, making dinner for my wife (2 more times) and SLEEPING......."no hill for a climber"🤣
I am 100% confident, this is gonna be a great week......"hopefully not quite like last week, but GREAT!!!

Sunday FUN-day is here............."and I don't want it😂"
Holy COW what a week. Yesterday was absolutely EPIC. Not only did we serve all of our Seafood Boils (basically as fast as I could get them boiled) but Dee refused to switch to the limited menu and cooked...........quite literally EVERYTHING else in the place😳
When the dust settled and the crowds finally thinned, I was rewarded by pealing 50lbs of potatoes and grinding 40 pounds of burger so we can get through the last day of a VERY aggressive week. Thankfully NASCAR "knew" how beat up we'd be after a week like this and mercifully scheduled today's Quaker State 400 for a 4pm start time😍 (If you are very quiet and listen closely, you can already hear Downtown Tony Brown bitch'n about how he hates late races🤣)
Before I get into the day's festivities, I need to address a "few" things we are out of.........." basically, FOOD😂" Just kidding "sort of." We are out of steak(s), chicken strips, nachos and patience🤓 There are "several" other menu items that we are dangerously close to being out of, but apparently, "the show must go on🥺"
We are kicking things off with our Early Bird Menu and "the Best Deal in Lunch!" The Early Bird is available from open-3pm. For our Dinner Special, we are swinging for the fences AGAIN with what might be a perfect Sunday Diner, BBQ'd Chicken. Each order comes with a half of a chicken that has been brined and dry rubbed before hitting the smoke, to ensure a moist and delicious finished product. Your "bird" is served on a bed of stuffing and paired with fluffy garlic mashed potatoes, gravy, green beans and a warm dinner roll for just $17.
Then at 4:19 the "green flag" drops for the Quaker State 400.....at 4:23 the "trash talk" should be in full swing and by 4:36 Tony should start telling everyone, "there's a lot of race left😜"

Saturday is here, and we are getting ready to hit the NOS on this week! We have had 2 "sell out" specials in a row (always a good start) but today is the real test on just how this week is going to "pan out." That's right as promised today we are doing our Seafood Boil!
Each boil comes with 1 pound Snow Crab legs, 17 Jumbo 16/20 Shrimp, 1/2lb of premium Sausage and 3 mini ears of Corn on the Cob and more than 2 pounds of seasoned Red Potatoes. That puts each boil at around 5 pounds with 2 1/2 pounds of meat. We are boiling to order in our heavily seasoned water, so your meal is hot and fresh. Ounce everything is hot and the shrimp are cooked we dust this feast with some Old Bay seasoning add in 3 slices of Texas Toas Garlic Bread and you are ready to dig in. Each Boil is $45 and plenty big to share.

Q; Can we take this to go?
A; Absolutely, they are too big for any of our plates, so each one is served in a disposable aluminum pan (same one we do our lasagnas in)

Q; Will you be taking phone orders?
A; I don't know. I will be in the beer garden much of the day, so it greatly depends on how busy Dee is inside. I would "suggest" just coming down, but sometimes she is a glutton for the punishment😆

Q; Can I get more _______ with the boil?
A; No, everything is precisely portioned out. We have 31 total and we are planning (hoping/praying) to serve all 31 as this was a HUUUUGE risk for a special

Q; Can I get mine boiled in water without the seasoning?
A; No, I'll have two pots going and both will be seasoned exactly the same. "IF" you absolutely "hate" flavor, you can get an order to take home cold (not boiled) and prepare it however you'd prefer but the price stay the same as this is an extremely tight margin.

Q; What do I get is I eat the whole thing by myself?
A; I would "assume" heartburn and a tummy ache😉

Q; How many people can this feed?
A; "How long is a string?" To many variables but my "best guess" would be 2-4

Q; Do you have the Early Bird today?
A; Yes, it is available until 3

"What a great week! Big thanks to everyone that came and spent a little tiiiii".........."What the🤬do you mean that was just day ONE!?!?" Apparently is only fricken FRIDAY😭and we still have a whole weekend to get through🤣
All joking aside, we started things off with a bang, selling out of our Halibut Sandwich (28 orders) in about 3 hours. As we head into the weekend, we are starting the day with our Early Bird Menu and "the Best Deal in Lunch." Our early bird id available from open-3pm.
At 3 it is time to "grab a gear" as we bring back a warm weather favorite, Seared Ahi Tuna😳. For those of you that have not had Ahi or hear tuna and think of a can and a sandwich, this isn't "that tuna.
We start with AAA sushi grade center cut loins. This is the ONLY protein I get that is flash frozen, vacuum sealed, bagged and then wrapped in bubble wrap before packaging. Basically, they take this fish VERY seriously........and they should. I have affectionately nicknamed it the "Ribeye of the Sea."
We start with a hand cut 12-ounce Ahi steak. Each steak is crusted with sesame seeds and seared to an internal temp of 110-120 degrees. Your steak is rested and sliced before being served with some seasoned sticky rice, our house made soy teriyaki dipping sauce and a crispy eggroll for $17.
This is a VERY limited special and NOT something I can just "grab another one out of the freezer" so when/if they are gone, they are GONE!

Q; Can I reserve _____ orders?
A; No, this is first come, first served.

Q; Can we get this to go?
A; Absolutely, but I anticipate NOT taking phone orders, so you'll need to "kick it old school" and come on down😉

Q; Can I get mine "well done?"
A; No, and here is why. "If" you cook this all the way through 155 degrees, it becomes VERY dry. It is a culinary disservice to the fish and the customer. The result is not pleasant, and you won't enjoy your meal. If you are dead set on needing it cooked well beyond the suggested range, I would suggest choosing something else off the menu.

Q; Can I get mine on white bread with mayo and pickle?
A; NO!!! Wrong tuna🤣
