This is a home grown, veteran owned small business that centers on the principle that food should tell a story, and that story is LOVE. As with most of the richest food cultures of the world, the beginnings are rooted in necessity. From Gumbo to Poboys to Rice & Gravy to Boild Crawfish... Pick one!! The beautiful thing about the culture of this land in south central Louisiana is just that. We make

the best out of what we have and we make it taste good. These words as I am typing them are from myself, the founder of this business, Adam Lee, from Grand Prairie, La. I moved back here after 6 years in the U.S. Army and 10 years in New Orleans. I'm just now preparing to open this kitchen in Opelousas in the next few weeks. I quickly realized that missing from local cuisine, outside of the immediate area where I was raised, is the hand made authentic Cajun specialty meats and genuine Louisiana cooking that I was used to. Before I even moved back, I began making original Cajun boudin, smoked pork sausage, tasso and cochon-de-lait, among other items, like I was taught growing up, and I quickly realized a business concept that would be full of authenticity, originality and flavor. And I fed a lot of my Army buddies and blew their minds. :)

I recognized that people from other places don't have that available... at all. So they certainly don't realize or appreciate what they're missing. Most importantly... these items and dishes are unique and this type of cooking and this culture are under represented!!!! I decided it was my lifes calling to build this business, Lee's Cajun Cuisine, and build this brand for those reasons. I think the business prospect is solid. I want to bring authentic cajun cuisine to all the people. I believe I can build a successful business and bring true cajun food out to the people that don't have the fortune of living here and enjoying our cuisine and our culture. From Sauce Picant to Couvillion to Gumbo to Jambalaya and some Smoked Out Red Beans. I went around the world in the army... and I can tell you that we are so blessed here in this region to have this great food and culture. I feel it is my obligation to show somebody what they're missing. Cajun culture is the epitomy of the celebration of life. I truly feel an obligation to walk this path and achieve these objectives. It very much like I feel like I have to pay a debt for being so blessed to have been born and raised in such a rich culture and land. I have utilized everything aforementioned along with my personal experiences to create a menu that sets itself apart and I believe represents Cajun culture. I look forward to what's to come.
