Our fifth installment in our exploratory series is inspired by turon, one of the Philippines’ most beloved merienda treats.
Golden, crispy, and filled with sweet saba bananas (and often paired with ripe jackfruit), turon is the SWEET lumpia 😛. Influenced by the Chinese introduction of spring roll wrappers centuries ago, Filipinos transformed the technique using local ingredients, creating a dessert that has become a street food icon and a cherished part of Filipino culture. We wanted to honor that history by reimagining its familiar flavors in halo halo form.
Built on a base of housemade caramelized banana milk over ice, this special layers sweet coconut macapuno, brown sugar crystal boba, pandan jelly, coconut jelly, plantains, and jackfruit, then finishes with a flavorful plantain crema. It’s topped with crunchy cereal, a scratchmade coconut tuile representing a spring roll wrapper, a wafer stick, and scoops of our jackfruit chili nut ice cream for a playful tribute to this Filipino classic.
