Everything feels slower at a farm restaurant like Saltwell. Unplugging is a way of life, or says the many farm businesses like us. Signals are left to the stars and nourishment is found as much in the trees and weeds as the menu you don’t choose from. It’s just there, written, set in seasonal stone.
The sounds are different too. Cars and crosswalks are geese and goats. Alive in their own comedic dinner theater. Even the salt tastes different—earth minerals do most of the work and behind the curtain we prepare, plate, and perform its story.
Places like ours aren’t for everyone. The hustle is in the kitchen and the race is obsolete, exposed to only those who know how to look for it. Three hours is a long time for some folks, but for most, it’s an old vinyl on the record player at church.
We cost more, because we offer less:
Noise.
Decision.
Distraction.
Convention.
Cool.
