Jessica and I were given the opportunity to cater the annual auction for St. Patrick Catholic School. I believe this is our 5th year!

While I didn't have time to take many pics of our setup, then menu seemed well-received. We served a spinach-strawberry-feta salad, roasted chicken, cheesey potatoes, green beans, glazed carrots and corn bread (it was ok, definitely not famous daves).

Thank you to all who attended, purchased items and put forth the effort to erich the learning experience of the next generation!

I get asked often why I chose making tacos when are there are so many other foods out there. My love for Mexican cuisine goes way back to the early-mid 90s when my parents would take our family to places like El Ranchito or Alejandros back in Ulysses.

If you ever make it out west, you have to stop. Get the bean dip supreme. Get something smothered in green chili.
