Congratulations to all who worked hard to broker peace in Ethiopia that took place in Pretoria, South Africa yesterday. It stopped a war that has costed several hundred thousand of lives and displaced millions for the last two years. It was a truly African solution to a African problem. We hope this leds to true Pan Africanism and a lasting peace, not just in Ethiopia, but to all Africa.

The restaurant reopened in January after an extensive six-month renovation that included paneling the walls with Ethiopian wood and peppering the dining room with colorful mesob baskets. A lot of care has been put into this humble strip mall setting, and it shows…on my latest visit, that included a standout berbere spiced doro wat key made with a chicken leg and hard-boiled egg, as well as a chunky keyser salad of roasted beets with potatoes and garlic. Thanks, Marilyn T. for bringing these century-old Ethiopian artifacts collected by her Uncle Richard Buchanan. We appreciate it so much for gifting us this and by that showing us more of the culture of Ethiopia. The first item shown is an Agelgil which is like a lunchbox and holds food for a day or days while a person travels across the countryside. The container is made of a thick material like goat hide to protect the food from spoiling faster. The Second item is a Bottle gourd used to make Ethiopian butter called kibe using soured milk called irgo. It is then smoked with Olea Africana causing a bacteriostatic effect. After this, the opening is closed and churned rocking and turning the Bottle gourd and stopping when the butter starts to form. At the least center, these lumps of butter are then skimmed off and kneaded in cold water as well as washed to remove visible residue. Now the butter is ready. This butter is then clarified and mixed with many different spices called (Nit’ir kibe) That is how many Authentic Ethiopian dishes are made.
