ไก่กอและ Kolae Chicken Skewers (Southern Thai turmeric-coconut grilled chicken)

Charcoal-grilled chicken, marinated in hand-pounded southern spices, glazed with reduced coconut cream and tamarind, delicately lacquered over open flame; served with fragrant herbs and a gentle smoked finish.

For this Kolae chicken, we begin with free-range chicken, chosen for its natural texture and ability to carry spice with depth. The marinade is prepared fresh each day by hand. Chilies, garlic, shallots, coriander seed and turmeric are slowly pounded until their oils release and the aroma becomes fully expressive.

We then enrich the paste with freshly pressed coconut milk and palm sugar, balancing warmth, sweetness, and a gentle acidity from tamarind. The chicken rests in this marinade for several hours, allowing every layer to absorb the character of the spice.

During grilling, it is cooked entirely over charcoal. What is important here is patience: we brush it repeatedly with a reduced coconut glaze while turning it slowly over the fire, so the exterior develops a light lacquer and delicate caramelization without losing moisture.

The final flavor is intended to move gradually. First the sweetness of coconut, then the smoke, then the deeper spice, with tamarind lifting everything at the end.

For us, Kolae chicken is a dish about attention: simple ingredients, but every moment of handling changes the result.
