I had a doctors appointment yesterday so I want able to make this traditional Korean Lunar New Year soup called Mandu Ttokguk. But better late than never. So today I present to you one bad mamma jamma of a soup! This starts days ahead of time when we make house beef stock with all the trimming from your bulgogi. Then I take that mega flavorful stock fortify it with some dry anchovies and kombu, and braise some beef in it. For service I cook coin shaped rice cakes in there to symbolize the money you will make in the year of the horse. Finally it get hit with six handmade Mandu which are Korean dumplings house made with beef, pork, kimchi, tofu, and aromatic filling. All said and done this is one of my favorite things to eat, especially on a great rainy day such as this one. So please come celebrate a belated lunar new year with me.

Didn’t make reservations tonight…good cause we don’t take em! But please do come in with those you love and celebrate with us.

In celebration of all things pink and sexy we are rocking two delicious features today.

Langoustine toasts- this dish begins with a smooth langoustine mouse (Langoustine, sesame oil, soy, green onion, cilantro, garlic, ginger, patis, egg whites, potato starch) slathered on thick cuts of Hawaiian sweet bread, then rolled in sesame seeds. We drop those beautiful babies in the fryer garnish with some gotchugaru and lemon. Think lobster roll but better!

Chips n’ dip- spicy mayo ahi poke with a fat dollop of trout roe served with garlic shrimp chips. They quietly snap crackle and pop sweet nothings into your ear as you enjoy them!

And last but not least I made some of my signature Mandu with beef, pork, tofu, and kimchi filling. Served steamed only tonight because we think they are sexier that way! 🥰

Holy mackerel it’s whole mackerel! We have two fresh fish specials today.

The first is a whole mackerel stew with a two types of in house kimchi, onions, potatoes, zucchini, and jalapeño all in a fiery spicy fish stock.

The second buldak cod is a panko breaded cod filet covered in a sweet and spicy buldak sauce. Served with a side of grilled veggies and rice

So swim on in to Soju today and enjoy some delicious fish!

Ok folks Soju is open today for takeout, dine in, and … wait for it… delivery! If you live a reasonable distance away I will personally deliver you hot soup and your other Soju favorites. I’m doing 3 delivery windows one I will depart at 6pm, 7:15pm, and 8:30pm. Please make sure a clear path to your home or apartment is shoveled if you are getting delivery. We are also rocking all 3 of Sojus famous soups tonight!

Kimchijiggae- hearty kimchi stew with 2 types of house made kimchi (radish and Napa cabbage), braised pork, and tofu. This one’s a spicy mamaja!

Chicken egg drop- just like I used to eat at Manchu Wok in the Monroeville Mall minus the corn starch. Rich chicken stock fortified with shoyu and fish sauce, shredded chicken thighs, and free form egg ribbons, garnished with lots of green onions and a lil cabbage kimchi

Dak Guk- rich beef broth, onions, braised beef and rice cake medallions. Also garnished with green onions. This time around it will not include the beef Mandu as it did last week because I don’t have enough time to make them today. I am going to run it again tomorrow with the Mandu if yinz want to hold out till then. And if the deliveries go well tonight I’m also going to offer them tomorrow.

All soups are $18/quart and are sold with a side of rice!

Soju will be closed today Tuesday 1/27 in order for our staff to dig out their cars and safely get into work. If you are walking by Soju today notice that I personally shoveled a walking path because the three buildings to the left of us our now vacant. I also helped another neighbor dig their car out. If you are able bodied maybe check on your neighbors that might not be able to dig themselves out and give them a hand. And maybe just take a second and admire the beauty of our city covered in snow. Today’s special holds a very special place in my heart. This one is something my grandmother would make pretty consistently throughout the winter season but traditionally it is eaten on Lunar New Year. First we begin with by making a very flavorful beef broth in house using all of the beef trimmings from your bulgogi. Then that broth is fortified with kombu and dried anchovies. Using this wonderful stock we braise sirloin and onions. Then to order we cook cylindrical rice cakes and house made beef Mandu 🥟inside. Mandu are korean dumplings and this time around ours are made with ground beef, tofu, kimchi, garlic, ginger, soy, and sesame. The starch from the rice cakes and mandu thinken the stock into the most beautiful texture. The result is heavenly especially on days like today when the cold makes your spine hurt. We rarely make this soup because it takes many days of painstaking labor but we did it for yinz today as a reward for making it out to see us in this awful weather.

This is LOVE in a bowl! Please brave the cold and come try it.

Mandu days are special! Mandu is a Korean dumpling that can either be steamed, pan fried, or deep fried. Today’s offering is steamed Mandu with a very nice beef, tofu, and kimchi filling. When I was young grandma would have us all over her house and we would pinch Mandu all day just to feast on them in the evening. I have very fond memories of those days. I remember being like 10 years old and crushing 20 of these bad boys. Come in and see if you can beat my record!

Happy New Year from the Soju back of house crew! I could not be more grateful to start 2026 with these folks. Without me even asking this small but mighty bunch was in the kitchen early today to start everything from scratch after our long break. 2025 was a really rough year for me and Soju would not have made it without their hard work. So please stop by tonight and enjoy our first dinner service of the new year!

Soju is centered around good food but even better people!

Aight yinz it’s been a hell of a year, but let’s close on a good note. I love each and every one of you with all my heart. That is why I am pushing extra hard today to produce some excellent affordable food. I really need you guys to show up today though I’m gonna have all this food hot and ready to sell at 5 PM. Don’t worry the line will go fast and you could wait inside out of the cold. Stay safe on those roads and be good to one another. I got five on it last of 2025. Cash only…Let’s go!

Soju will be closed from today Dec 23 until Jan 1 so our staff has time to reset and enjoy time with their friends and families. So in order to show my gratitude I am doing one of my legendary “I got $5 on it” pop ups beginning at 5pm today. This was something I started during Covid because I felt like it was something I could do to provide good cheap food to people during a difficult period. I myself have a difficult time getting through the holidays especially with all that is happening in the world lately. So I felt like the Soju community could really use some good cheap eats while you are all gearing up to gather with friends and family. So beginning at 5pm today I will be selling $5 to go boxes full of cheer and joy. So please stop by tonight and help me share my love for you all!
