Nedwetzky is the maker of a Central Texas style Barbecue with heavy influence on his Austrian, German & Czechoslovakian heritage. Many of the legendary Central Texas Barbecue places use the counter service butcher block method and Nedwetzky Barbecue is no different. The meats are pulled off of the smoker and sliced specifically for your order and served on butcher paper. We charge all meats by the pound, but you don’t have to order a full pound. You can order a slice of brisket, a hand full of pulled pork or one rib, it’s up to you. Our sides are heavily influenced on his Oma's Austrian and German heritage. These are the foods Stefan grew up eating and loved. Fresh Austrian potato salad & cucumber salad for a bright tangy note and the savory beans were always a hit with all of the family's backyard barbecues. It’s not easy work and there are no shortcuts to doing it right. Our Texas barbecue pits are fueled by nothing but post oak wood, the Best quality meats available and passion! We grind and stuff our own sausages from our own family recipes going back to Austria, Germany and Czechoslovakia. Anything and everything we can make from scratch, we will make from scratch.
