This is our new baker, Bekah Chase on just day FOUR of training! It usually takes weeks and sometimes even months to really get comfortable with frosting. Even people who have gone to culinary school or worked in other bakeries can struggle with it, and I honestly don’t think I’ve ever seen anyone pick it up this quickly!

I asked Bekah Chase if she had much frosting experience. She went to MTECH, but said they didn’t do a lot of frosting there. What she did do was make lots of cakes and cupcakes at home. And that’s exactly how I learned too.

I didn’t get good at baking or frosting because of school or another job. I got better because I wanted to improve, so I kept practicing at home over and over again!

Bekah is such a great example that you don’t need years of professional training to become good at something. You just have to want it, stay consistent and keep practicing. That’s where the real growth happens! Love this so much!

If your whipped cream is overwhipped, add a small splash of cold heavy cream and gently mix it in until the whipped cream becomes smooth again. Your welcome 🤗

Maybe the secret to having a good life is realizing how good it already is. It really is all about perspective.🤔🤔🤔

Yes, throwing away an entire pan of lemon bars because I made them wrong is frustrating. It feels wasteful, it costs money, and honestly, it makes me mad at myself.

But then I have to step back and remember how lucky I am that I get to do what I love for a living. That after 13 years, our little business is still busy enough that we can make another batch. And that one bad pan of lemon bars is definitely not the end of the world.

And because of that fail, I realized I had been overmixing the shortbread. It was making it so light and fluffy that it was literally falling apart.

So yes, I ruined a pan of lemon bars… but I also figured out how to make them better.

You can’t grow if you never fail.
