-Mike Harbin served in the united states Marines after high school.
-We love BBQ and love to be around it.
-I have many ties to BBQ, My brother-in-law and sister are very involved in the BBQ circuit in central Texas; they've captured many awards in numerous competitions and cary some Grand Champion titles as well.
-We enjoy close friendsh

-We left our careers back in Texas in the insurance world and decided to head to the Pacific North West.
-My wife Heather and I currently run our business together. Heather is a graduate and communications major from the University of Washington and grew up here in the Port Townsend area.

We get asked all the time..”what time do we light our pits every day “?

Depending on the event or time of year, it can be as early as 2am or at late as 4:30 am..

These guys get up early as heck every day and come in ready to grind. Some days the weather is nice. Somedays the weather is not. They work on really cold & freezing weather days, sometimes there’s a little snow, other days it can get pretty warm in the pit room. We have days with all three pits going with the days of the week blurring together like one long day. And sometimes we have some good ole regular easy days…

Sometimes I hop in there in balance out the load a little more. But these guys are the grinders in the pit room who turn the lights on every morning!

I never dreamed that I’d have the help on the pits like I have now. I couldn’t be more proud of what each & every one of them accomplish on a daily basis. I receive compliments daily on the food I cook but I grin and tip my cap back a little and shake my head as I let folks know who actually cooked the food today!

It’s difficult to maintain a constant level of consistency with 4 different people loading & running pits daily but we do it with minimal variations. We will continue to get better & better!

Thanks for listening & thanks for helping us get it right, we all greatly appreciate it!

1 Rack 4bone Beef Chuck Ribs
5 Racks of St. Louis Ribs
2 lbs turkey
Sausage
Links & some chicken thighs
1st come first serve at this point,
- the line finally died down!
We’ll be here until 6pm or sell out!

Public Service Announcement! Happy Anniversary to Mo-Chilli BBQ! We are 11 years strong today! We had a massive party last year here at the restaurant & it was such a huge success. It warmed out hearts to see so many of you here helping us celebrate! I’ll say it again, we never could have imagined that things would turn out like they have. We came up with a plan & executed to the best of ability. Our teams stands right next to us & grinds out the long & heavy days right beside us, we couldn’t be more proud of that as well. But the big thing is you guys! You guys been here for us through so many highs & lows & we are forever grateful!

But, the picture of us above was our 1st day I think & it’s a little dated! So tomorrow, Heather & are are gonna pause the line for a brief moment & take a picture together at the restaurant at 3pm sharp. It will be a quick pause & we are inviting each & everyone one of you, if you’d like, to join us in our photo moment! It would be our pleasure to have you share the moment!

I unfortunately didn’t have time to plan a party for this mainly due to our volume here at the restaurant but even freezing a moment in time with a great photo will be great to look back on!

Please come by tomorrow if ya can, photo promptly at 3pm! Grab a picture with & some BBQ to take to your party!
