It is our vision that this page will take that to a new level. This page will allow people to follow us beginning at the stage where our hives are mere stacks of lumber. People can then join us in the journey of ass

embly to painting and placement of the hives, installation of the bees, maintenance and observation of the hives, harvesting of the honey, bottling and packaging of the honey and the production of other bee-products. It will enable people to watch their honey being made, and in the future, allow customers to look back and see what went into their jar of honey or their tube of lip balm. It provides a new appreciation for what goes into each bottle and opportunity for conversations/answers from those making the product and tending to the bees. In addition, times will be updated for opportunities to observe us in action in the hives, and if desired, the opportunity to get hands-on with the bees. This is going to be a learning experience for all involved, as this will be our inaugural year as Langstroth beekeepers. We have a top bar hive at our home for pollination and as a hobby, leaving all of the honey that they produced for the bees to eat through winter. So, get ready to learn all you ever wanted to (and more!) about honeybees and the honey-making process.

Good Morning Port Washington!

What a gorgeous day it is. Perfect temps low humidity. No reason to not come down to the Farmer's Market.

Now until 12:30p.m. on Main Street.

I brought a couple of the "water white" along so come get them while they are here.

While setting up I found I mixed in one of my antique jars. 😬🀣 Sorry not for sale...or is it? Everything has it's price. 🀣 But not today.

I've been harvesting and bottling all week. Just about 40 gallons in the big tank from Saukville to be jarred next.

Small batch honey harvesting and bottling has begun!!

Oops! Forgot to check stock on the pint jar labels. I thought i had some from last season but I used all of them. 🀣 I have plenty of the other size labels just not the ones I filled most of.
Quick call over to Kim at Heritage Publishing right around the corner and he is working on them now. Not an issue but when I fill and label it's nice to do it all in sequence.

Let's talk grading of honey. Which refers to the color of the honey as per a fancy chart that outlr trusty USDA goes by. My honey is normally what is classified as "ungraded" which is printed on label. I will put that chart in comments later on.
My first batch is coming in as "water white" which is more rare to find. I have had it in 2021 and 23 as the red clover batch. Now this is not as light but pretty close, it is really smooth, silky smooth on the pallet. I had to put the spoon away after my 6th spoonful it was just that good!
The other batch i spun yesterday was from (near) Riveredge yard. Much darker, amber in color. A delicious Basswood, along with other nectars. The flavor profile is a buttery, minty smooth taste. Absolutely delicious!
I taste while uncapping and I chew the wax with the honey still on it. Now this honey was still warm from the bees as I pulled it at about 1pm and spinning it at 4pm. The fragrance is phenomenal as well. I normally don't keep the lid off extractor as vaporized honey gets everywhere but when it smells this pleasant you just don't worry about the mess. 🀣
The first batch i kept 3qts for myself and will probably keep at least a gallon of the basswood for myself..because I can. 🀣 But I promise I will share with you all and it will bees on the table at market hopefully this weekend. Back to work!

Good Evening All!
What a fantastic weekend! Hope everyone enjoyed themselves celebrating for the 250th 4th of July birthday.
And after all the festivities..we have to work.🀣
Beekeeping is like gambling.From will my bees survive the Winter to are they going to pay their rent and produce honey. It's sort of like that box of chocolates..you never know what you will get..but you still need to buy vessels to put honey in..and usually you need to buy early to save on costs.
So here is a portion of what I wanted to buy. Blaine's is now empty of Anchor Hocking in Grafton. I am hoping they can locate more at a decent price or I may need to get Ball or Kerr brand. I prefer Anchor since the clear jar accentuates the honey. So I will see what they can find tomorrow.
I forgot to take a picture before I started unloading..so there was more.🀣So glad the temps were not like they were last week because this would not have gotten done.
In trucking terms today I was a "lumper". Back in the 90s we would pay some poor chump at Roundy's warehouse to move product from one pallet to another for like $25. Today I hand touched each of the 130 cases 3x..moving almost 4,000lbs. Off truck to tailgate,then to doorstep, then into house. Rinse,lather,repeat.🀣And I get to do it again
35years I have been living where I am.This is the first time I ever saw these Catalpa trees in blossom on the west side of the church.Those trumpet shaped blossoms are really bee-autiful and quite fragrant.I had no clue these trees were even here. Could be why the honey has tasted so wonderful over the years.

On days like this. You Do Not bother the bees. Stay Out!

They are doing their best to keep the inside of the hive at the coolest temperature they can.
Fanning and cooling, releasing water that they carried in to create that spray mister many of you may have walked under.

Many bees will move outside trying to not create excessive body heat inside.

Removing the lid messes up their air conditioning they are trying to do. Opening the hive lets more heat in than they want..resulting in not very happy bees. 🀣

Good Morning Port Washington!

We have our first Mega Market of the year already. What is that you ask?
Vendors all the way west to the Old Courthouse. A few extra food trucks are on that end so bring your appetite.

We are located as always on Main Street in Port Washington. 8:30 - 12:30 p.m.

The minis are back as well. For those that have never tried cut comb here is your chance. These are kind of the "seconds" that just were not large enough to make a slab cut. Still the same great comb honey though.
Brought a huge selection of some of your favorite past years vintages as well. I have now 5 to 6 years of honeys from many of the yards. When they are gone they are gone! I found another KKS sitting all by itself in a flat. That one dates back to 2020!

Gotta go.
