Here's some info on the Bali Blue Moon beans we roasted:

A home roaster’s secret and a hidden jewel, our Bali Blue Moon’s birthplace has been heavily regulated by the Indonesian island’s government since the 1970s, which is a bittersweet situation––on the one hand, farmers may have less individual control over their crop. However, it also means the quality, handling, and processing are consistently excellent. Moreover, Bali experiences a significant social, economic, agricultural, and technological enhancement because of this regulation. No matter what viewpoint you have, it can’t be denied that this complex bean is of high quality.

Cupping Notes: Smooth and syrupy body with an anise flavor which adds spice to the dark chocolate and vanilla bean flavors. It is a tad sweet and very complex.

Dominican Republic Caribbean Beans roasted just after the 1st crack.

A fun day testing out the cart for some sample roasts for friends and family!

We are beginning to work on the cart for a remodel and to bring it all up to an operating status!

The plus side is that this cart was not too long ago functional and pretty much everything works!

We will be launching an Indiegogo Campaign to help us cover the expenses for the bare minimum remodel and build out and all the essentials for the inside such as an espresso maker and more!

We would love the support! Keep an eye out in the coming days for more updates!

Red Honey Processed beans roasted to Full City+ from the carribean!

This early islander test batch is the start of many, and will eventually become Niflheimr Roastery Co's "Drink Up Me Hearties Yo-Ho" roast!

Honey Process: This coffee bean is red honey-processed and grown in the Dominican Republic’s Jarabacoa region at 1,400 meters above sea level––its variety is caturra. As a honey-processed bean, the skins of the fruit are removed, but the pulp, or mucilage, remains on the bean during fermentation––this leaves a sticky-sweet sensation and fruity notes. The longer the mucilage remains on the bean, the longer the fermentation––thus the darker the honey process and the sweeter the cup.

Cupping notes: With milky notes of vanilla, and a nutty aftertaste, with heavy strawberry aromas that carry over into a stone fruit flavor. Smooth and balanced sweetness. This low acid coffee is smooth and will impress any island coffee lovers out there.

ETHIOPIA
ORGANIC KOCHERE G2
Yirgacheffe

Ethiopia Yirgacheffe G2 Organic Rainforest Alliance comes to us from the Boji Kochere washing station, in the Kochere district of Gedeo zone. The coffee is a collection of the efforts of 2564 smallholder farmers. Their coffee is handpicked at peak ripeness and machine pulped, and undergoes anaerobic fermentation before washing. Finally, as is typical to the region, the coffee is sundried on raised beds for seven to ten days depending upon sun and humidity.

Cupping Notes: Stone fruit, brown sugar, floral, black tea; bright citric acidity, juicy body

ETHIOPIA
MISTY VALLEY
Yirgacheffe

Producer, exporter and developer Abdullah Bagersh ensures that Misty Valley’s ripe cherries are subject to superior care from start to finish. Through the first 48 hours, the coffee beans are constantly turned to provide even evaporation. This process provides consistency and cleanliness, which is often difficult to accomplish in the Gedio region of Ethiopia. The resulting flavor reminds tasters of blueberry muffins.

Cupping Notes: Blueberry, chocolate, strawberry, floral, clean, consistent, balanced, bright lemony sweetness.

DOMINICAN REPUBLIC
ORGANIC RAMIREZ RED HONEY

HONDURAS
ORGANIC 18 RABBIT RED
Marcala

18 Rabbit is a collective of farms in Honduras that are female owned by Senora Flhor, her mother, and different members of the Zelaya Ontreras family. Dulce Marlen, the owner of Finca Dulce Luna, is the matriarch of the family, and owner of 18 Rabbit exports. She and her husband paved the way for organic and biodynamic farming practices, being intentional about naturally regenerating the soil they use for their agriculture. Members of this family have placed in the top 10 for Honduras' Cup of Excellence, and work together to create these unique fermentations you'll find in these coffees.

The Red Honey Process is fermented for 24 hours, and mostly at night in the cool weather. The cooler weather creates a slower ferment that you can taste in this coffee.

Cupping Notes: Aromas of strawberry, raspberry, and cherry that carry over into the cup with a heavier body and mild fruit notes of graham cracker, and walnuts. Balanced acidity and sweetness, well rounded, smooth, and juicy.

SMALL SAMPLER (Only 1/2 Pounds each)

Colombia: Don Enrique Reserve, Narino
Chocolate and cherry flavors, creamy body, and a long, sweet finish.

Ethiopia Organic Sidamo Shantawene Natural G1
Cupping notes: Raspberry jam, plum, tropical, spice. Clean and complex, juicy acidity with a clean finish.

Mexico: La Laja Honey, Tlaltetela, Veracruz
supremely sweet with a mild orange citric acidity, chocolate and sugar cane flavor profile, and a big creamy body. It is very clean and consistent.

Java: Organic Taman Dadar, Kayumas
Cupping notes include peat, baking spice, light baker's chocolate.

Papua New Guinea: Organic Purosa A/X, Eastern Highlands
Cane sugar sweetness, medium acidity, and creamy body with sweet caramel overtones and a slight cocoa note on the finish.
