Costa Rica, El Indio

We are excited to have another coffee comes from our friends at . El Indio is a fully washed coffee comes from San Marcos, in the Tarrazu region of Costa Rica. This coffee is very approachable yet complex and is delicious as a pour over, and fantastic in a latte.

We taste flavors that remind us of milk chocolate, orange, and walnut.

Finca El Diviso Java is almost gone! We don't usually post this often about a coffee so you know we are excited about it. We have very limited quantities left of this Anaerobic Java produced by Nestor Lasso in Huila, Colombia. This coffee offers truly unique flavors and will be sad to see it go, get some while you can!

World of Coffee San Diego Schedule.

Come say hello to and at WOC!

+Friday 2pm-4pm we will be roasting on site and brewing a bit of coffee with booth 3909. We will be sharing tips and tricks for getting great results on the bullet roaster.

+Saturday 10am-1130am we will brew some Java and Gajah Estate at the booth 2444.

+Saturday 11am-1pm we will brew some excellent Peruvian coffee from at the booth P8 in roasters village.

Brewing El Diviso Java Anaerobic.

We've really been enjoying fast flowing, low contact time brews. These really highlight the explosive florals in this coffee.

Here, we did 15g coffee, 225g water at 198f, and a 2 minute brew time.

We have this coffee back in stock for a limited time right now.

But also, we will be brewing a limited quantity of this coffee at San Diego in 1 month at the booth (Saturday April 11th, 10AM-11:30AM, booth 2444) Plan to come see us and taste this spectacular coffee.

We got a surprise second chance to buy this coffee from our importer, so we have a little more of it back on the website right now!

We will be doing a different approach with this one and roasting it on the trusty Probat so that we can offer bigger quantities! (We are very confident it will still taste fantastic) All sizes available!

We have something very unique hitting the menu this week, a Natural process coffee from the Gajah Estate in Sumatra.

“Gajah” means elephant in Indonesian, and the estate’s name pays homage to the wild elephants that roam the forests of Aceh.

The Gayo Highlands of Aceh are renowned for producing some of Indonesia’s finest Arabica coffees. Coffees from this region are usually known for their earthy, bold profiles. Gajah Estate breaks from this with it's natural process, offering a fruit-forward alternative that still honors the region.

We taste flavors that remind us of strawberry, hibiscus, and honey.

It's been over 9 years since our last Indonesian offering. If you are looking to try something new, we suggest this coffee! Currently available for wholesale partners and online orders.

Another fantastic coffee just hit the menu from one of our favorite farms. This is our final lot from La Bastilla estate of the season, and our 3rd Gesha release. We have offered this coffee in the past and it was one of our most popular Gesha releases!

If you are looking for a special coffee without all of the intensity of naturals , we recommend trying this one. It features layers of fruit flavors, balanced acidity, and lovely aromatics. It's an elegant coffee that works as a great counterpoint to our punchy Colombian options.

We really enjoy sharing coffees from Finca El Diviso and this coffee is no exception. At 1750 meters above sea level, El Diviso cultivates Yellow and Pink Bourbon, Sidra, Gesha and Tabi Varietals, they have become very popular in the coffee competition circles.

Tabi is a popular Colombian hybrid coffee, a cross of Bourbon, Typica, and Timor Hybrid, bred for high quality, clarity, and leaf rust resistance. This is the first time we have offered a "Tabi" variety. This washed coffee is a fantastic example of the quality coming from Colombia.

New Year/ New Coffees!

We have a very limited offering we are excited to share with you, a Gesha from Victor Bermudez in Huila Colombia!

For this Gesha lot, Victor carefully picks cherries over three days, and mixes the cherries from the last day of picking with the cherries that have begun the fermentation process a day and two earlier.
From there, he floats ripe cherries to remove defects, then de-pulps and ferments submerged in water in a sealed container for three days. The coffee is washed twice and dried slowly for 15–20 days, depending on weather conditions.

Flavors remind us of lavender, mandarin, honey

This coffee is one of our lightest roasts and feel it needs a little time to really open up. We recommend waiting at least 10 days after roasting to enjoy.
