When I had my own business, I made around 1000 cakes and I never really had a favorite. Then I went to Sweden 🇸🇪 The iconic Princess Cake is hands down my favorite. White cake layered with raspberry and vanilla custard. Fresh whipping cream and homemade marzipan. The almond and the raspberry is incredible. This cake is not sickly sweet. It’s a delicate balance. I only make it a few times a year.

I still make cakes for family and close friends. My Portland house was built in 1925 and the kitchen is microscopic. Seriously 2 is a crowd. 🤦🏼‍♀️

Time to come home after 3 amazing weeks all over Sweden in 7 cities. My final purchases were 4 pounds of Swedish Pearl sugar and premade Princess cake marzipan. I have priorities 🍰🥮 At home pearl sugar is $12 a pound. In Sweden it's $1.80. I'm already planning next year!

Before I leave again for Sweden, I’m selling pies. They are all delicious. I seriously have to stop eating everything I make 😂.

Along with the cake, I created a video of the absolute MESS I made sculpting everything. I didn’t even add up the hours. It was so personal to me it never seemed like work.

Tonight I see Wicked again. I’m a serious fan when it comes to this musical. In 2015 I was asked to create a Wicked cake and it was a dream. My only stipulation to my grooms was I had full freedom to go nuts with a design. YES there was a bubble machine in the middle. Glinda travels by bubble’ Here are some great pics.
