Urban Restaurant Group announces that Toro, it's modern Mexican-inspired restaurant located in Portland, Oregon, will temporarily close it's doors as of January 1, 2025. The closure marks the start of an exciting journey to reimagine the Toro dining experience. The restaurant is set to reopen in spring of 2025 with a revitalized concept inspired by an immersive exploration of Mexican cuisine.

During the closure, members of the Toro culinary team will embark on a trip to Mexico. The journey will take them deep into the heart of the country’s culinary traditions, from the bustling street food stalls of Mexico City to the regional kitchens of Oaxaca, Puebla, and beyond. The team aims to refine their skills, draw inspiration from local chefs, and bring back authentic flavors to enrich Toro’s offerings.

“We’re excited to hit pause and fully immerse ourselves in the essence of Mexican cuisine,” said Adrian Cervantes, Executive Chef of Toro. “This trip is about honoring the traditions,
techniques, and ingredients that make Mexican food so vibrant and diverse. We look forward to sharing everything we learn with our guests when we reopen.”

The reimagined Toro will feature an updated menu showcasing bold, authentic flavors paired with modern culinary techniques. The space will also undergo a redesign to complement the refreshed concept, offering guests an elevated yet approachable dining experience.
