We have partnered with Jorge Rojas and his family’s farm, El Jardín, for seven years, but this harvest marks our first time purchasing his Caturra Chiroso.
Genetically traced back to Ethiopian landrace varieties rather than traditional Colombian lineages, this unique cultivar produces dense seeds with a distinctly floral, tea-like profile. Jorge highlights these delicate genetics through a meticulous fermentation process, carefully monitoring the environment in sealed barrels so temperatures never exceed 23°C.
This slow, cool method, followed by a stabilized week-long drying phase, naturally develops a crisp acidity while locking in the coffee's aromatic clarity.
