I went simple and nourishing today I have a flavorful roasted vegetable with lentils. It is vegan and gluten-free. And as usual, I have my tomato vegan and gluten-free. I hope everyone enjoys this partially sunny partially rainy day we’re having.

Today I have made two different versions of Pozole one with pork and one vegan. I loved Harmony as a child so when I found the Soup I was in heaven. It is Harmony with tomatillos garlic, and other spices. It is warm and comforting and soothing, and as always, I have tomato.
