Chanterelles aren’t really something you can separate from the Oregon forest. They’re mycorrhizal, growing in partnership with the roots of living trees, exchanging nutrients beneath the forest floor. It’s part of what makes them notoriously difficult to cultivate and why the ones on our plates are still largely a product of season and a good forager.⁠
