Good morning, lovelies! π
We started out our morning with some π orange π scotch pancakes and wanted to share the recipe for those who want to try some at home! These are absolutely scrumptious...so light and soft!!! Originally made on a metal griddle over an open fire, we used our griddle at home.
**Please note**: I always try and use metric servings because it helps to give the accurate texture and taste needed for a recipe. If you do not have a kitchen scale, I have added an estimated amount in cups.
2 oranges plus zest
A bit of milk (can sub non-dairy milk...I used oatmilk)
175g (close to 1 1/2 cups) self-raising flour
1 tsp baking powder
40g (1/3 cup) caster sugar (if you do not have caster sugar, you can use regular sugar)
1 large egg
Oil spray (I use avocado)
If you'd like more orange π flavour, try adding a bit of orange extract! I did so with mine and it made it even better!
STEP 1. Grate the zest of oranges. Set aside. In another bowl, squeeze the juice out of both oranges. Add in the milk to the orange juice to make up to 200 ml (3/4 cup+2 Tbsp) of liquid. Set aside.
STEP 2. Combine the flour, baking powder, and caster sugar into a mixing bowl.
STEP 3. Make a well in the flour mixture. Add the egg, half of the orange and milk liquid, all of the zest, and orange extract, if using. Combine well. Add the rest of the liquid into the mixture and mix well.
STEP 4. Make sure you have your griddle or frying pan on your stove, heating up. Add a bit of oil spray. Drop however large a pancake you'd like on your hot griddle. Once it starts to bubble on top, flip it over and cook for only 30-seconds to 1 minute more. Remove, and repeat.
Serve with maple syrup, golden syrup, or whatever else you fancy.
