When James chooses fish for 85 Main, the decision goes far beyond what looks good that day. The source matters. The standards matter. The way it was raised, handled, delivered, and cared for before it ever reaches our kitchen matters.

Where your food comes from matters. The water, the farm, the handling, the purveyor, the chef choosing it — all of it becomes part of what ends up on the plate.

At 85 Main, this has always been bigger than serving something beautiful. We have always believed in choosing with care, even when that means paying more for better quality, lower-impact practices, environmental integrity, and the farmers, fishermen, vendors, and purveyors doing things the right way.

This Creative King Salmon from Tofino, British Columbia is responsibly raised Chinook salmon, carefully sourced through Narragansett Bay Lobster, and cut fresh by James himself.

But the larger story is this: good food should connect you to something worth trusting.
