So when a guest said their matcha reminded them of mac & cheese, the team asked one question: what if we leaned into that?
After some experimenting, the Mac & Cheese Matcha was born.

For two years now, Kelsey has been part of the rhythm of Café Aquí, leading weekend shifts and helping keep things moving. She started out coming in for the atmosphere and good coffee, and now she’s one of the people helping create that same experience for others every day. When she’s not at the café, she’s studying ecology and working in the field with reptiles and amphibians — a passion for herpetology that carries into the way she approaches her work: thoughtful, focused, and always learning. She loves the fast pace, the people she works with, and the little moments along the way — like pouring her first latte art tulip. Catch her on a busy shift and you’ll probably hear Lady Gaga blasting from back of house!

Every café has people who help shape its spirit. Chloe is one of those people here at Café Aquí. She’s been with us for three years, known for her welcoming smile and personality. More than that, she brings a quiet kindness to the bar. Chloe says her favorite part of the job is “being a listening ear to someone else’s story while also serving them something good to drink,” and that care shows up in the way she works every day. Outside the café she enjoys antique shopping, drying flowers, and sewing. One of her favorite memories here was helping a tired bumblebee by giving it honey until it was strong enough to fly away again — a small moment that feels very true to who she is.
