This week is going to be a very busy cooking week. I will be restocking many of my frozen meals, such as chicken bacon ranch, poblano Mac & cheese, chicken enchiladas, king ranch casserole, steak tortellini, chili and more. I’m also making some beef fried rice this week. I have chicken salad and macaroni salad on the menu for tomorrow as well. Im doing all of this so that I can focus on my thanksgiving orders and events next week. So let me know what I can make for you.

I received some of the professional photos from the fajita bar that I catered a few weeks ago and just needed to share them.

I threw together a a few things for a customer today that just wanted some snacks for her kids when they came over tonight. She also ordered one of my crack chicken casseroles and garlic bread to go with this.

The Tate Farms Fall Fun Fest was a hit. I think the funniest part was when I got down to my very last chicken salad and there was a group/family that was literally fighting over it. I thought I was going to have to auction it off. They even bought my sample container. So if you haven’t tried the Chicken Salad here’s your sign that you need to try it.

How much mayonnaise do you use in one month? This will last me through November, maybe. I was running low so I was happy when Sam’s & Costco put it on sale.

Did a little catering for a repeat customer. He ordered 40 cups and two fruit platters for his annual Halloween party. Thank you Neil for your order.

Man this has been a LONG DAY of cooking. Still have two fruit platters to put together and 40 charcuterie cups to do. Plus I made a bunch of baked ziti with meatballs, which was not on my original list but I got an order for it for next week so I went ahead and got that done. I also made several Firecracker casseroles for one of my customers.

Things I’ve made so far today. Homemade salsa, Italian pasta salad, crack chicken & rice. Oh my goodness it is delicious. And spicy & mild Chex mix that is killer good too!! Next up Mexican rice and chicken salad.
