An easy snack for late night munchies!!

Pork “nachos”! Absolutely delicious! 1. Bake sliced, sweet potato or yams coated with coconut oil at 425 for 25 minutes, for chips
2. Fry bacon on cast iron skillet
3. Place “chips” on cast iron skillet bacon grease
4. Layer with pulled pork (made yesterday in crock pot)
5. Another layer of “chips” and pork
6. Bake at 350 for 10 minutes
7. Top with guacamole, cilantro, bacon, and bbq sauce (I made my own)

Eating healthy is a choice.. and today- we choose this!! All big thumbs up! Thank you for the amazing recipes!!

Jesus is the way!

Jesus is the WAY! Let this be an encouragement to you! Nothing is hopeless when we have the knowledge this place is temporary! There is a whole kingdom of beauty and eternity awaiting if you choose to follow Jesus. Jesus chose to die on the cross to offer us this precious gift!
If we know Jesus, we know God. It reminds me of the saying, "Know God, know peace, No God, No peace". When life is moving along well and we are blessed, we don't understand what life can be like with no peace. When those days of darkness and difficulties arrive, peace seems so impossible! BUT GOD! He alone offers us peace in the middle of the worst situations! Praise Him for that! Know- this life is temporary! Your treasure and kingdom is waiting in Heaven! Endure life during hardships, praise God in the midst of the struggle, allow His peace to be your peace. Jesus is the way!!

Delicious! Citrus marinated salmon over shredded cabbage and spinach! Super yummy!
Marinade:
1/4 C balsamic vinegar
1/4 C fresh orange juice
1/4 C fresh lemon/lime juice
2 Tablespoons Dijon mustard
Marinate for an hour and then grill salmon!

This was delicious! No carbs- all protein and low fat!! Lemongrass, curry, ginger, and garlic sautéed with organic chicken and Swiss chard! So yummy!!
